Tropical Pineapple Whip


  • 2 ripe pineapples
  • 1/2 can (6 oz) frozen pineapple juice concentrate (or orange juice)
  • 2 cups heavy whipping cream
  • 1/2 teaspoon vanilla
  • Pinch salt


  • With the GoodCook Touch Pineapple slicer, core and slice pineapple, leaving the bottom of each pineapple intact. 
  • Place sliced pineapple in a large food processor. Add pineapple juice concentrate, whipping cream, vanilla, and salt. Puree until very smooth. Transfer to a GoodCook EveryWare container. Cover tightly and freeze for 2-3 hours.
  • To serve, use an ice cream scoop to place in the hollowed-out pineapple. Add a spoon and a cocktail umbrella, and enjoy!
