Steps to make one pot chicken pasta

  1. Cook the pasta in the GoodCook Everyday Cookware Chicken Fryer With Lid according to package instructions and drain using a GoodCook Colander Bowl.
  2. In the same pot that the pasta was cooked, heat the butter and olive oil over medium heat until the butter has melted.
  3. Reduce the heat to low and add the garlic cloves, stirring until fragrant, making sure the garlic doesn’t brown.
  4. Add the tomatoes and chicken and stir until heated through.
  5. Add lemon juice and ¾ cup of chicken broth and stir to combine. Add the pasta back in and toss to coat. Season with salt and pepper to taste and garnish with fresh basil.

Can you make this pasta ahead of time?

Yes. Store it in a container with a tight-fitting lid until ready to eat. Add some extra chicken broth and reheat the meal in a skillet on the stovetop.

Store leftover one pot chicken pasta in a food storage container with a tight-fitting lid for 3-5 days in the fridge. One Pot Chicken Pasta


Ingredients

  • 1 1/2 lb penne rigate pasta
  • Store bought rotisserie chicken, cubed
  • 1 1/2 cups cherry tomatoes, halved
  • 4 Tbsp unsalted butter
  • 3 Tbsp olive oil
  • 1 1/2 Tbsp minced garlic
  • 1 cup chicken broth
  • Juice from 1/2 large lemon
  • Salt and pepper to taste
  • Fresh basil leaves, garnish

Instructions

Cook the pasta according to package instructions. Drain the pasta.

Empty pot, heat the butter and olive oil over medium heat until the butter has melted. Reduce the heat to low and add the garlic cloves, stirring until fragrant, making sure the garlic doesn’t brown. Add tomatoes and chicken and stir until heated through.

Add lemon juice and ¾ cup of chicken broth and stir to combine.  Add back the drained pasta and toss to coat.  Season with salt and pepper to taste. Garnish with fresh basil.

One Pot Lasagna

Ingredients

  • 1 Tbsp Olive oil
  • 3 cloves garlic, minced
  • 1/2 yellow onion, finely diced
  • 1 1/2 pounds ground Italian sausage
  • 2 Tbsp Italian seasoning
  • 15 oz can diced tomatoes
  • 3 cup tomato juice or Bloody Mary mix
  • 10 oz fresh mozzarella, sliced into 1/4” thick pieces
  • Finely chopped parsley

Instructions

Heat oil in a large saute pan. Add minced garlic and saute until aromatic. Add diced onion and saute. Add Italian sausage and cook until browned. Once browned, add seasoning and diced tomatoes. Break up lasagna noodles and add them to the pan. Add diced tomatoes and tomato juice bring to a simmer, stirring every 2-3 minutes to keep the noodles from sticking together. After 8-9 minutes, top with mozzarella slices, cover and cook 5 minutes more, until cheese is melted and pasta is al dente.
Garnish with parsley. Serve and enjoy!

One-Pot Meatball Stroganoff #OnePotChallenge

A simple stroganoff you can make in less than 20 minutes. We’ve used cream to thicken the sauce, but if you love that tangy taste of sour cream, swap the cream for 3/4 cup of sour cream and 3/4 additional cup of broth. For more veggies, add 2 cups of sliced mushrooms or baby spinach when you add the meatballs to the pot, saute for a few minutes, then add the broth. This recipe is so easy to customize, feel free to swap in whatever meat, pasta noodles or veggies you already have in your pantry or fridge. You can’t go wrong with this simple One-Pot formula!

Ingredients

  • 1 Tbsp olive oil
  • 2-3 Tbsp chopped garlic (or garlic powder)
  • 1/4 cup diced onion

One Pot Creamy Zoodle Alfredo is a creamy and delicious one pot dinner that’s on the table in only 15 minutes. An irresistible combo of gluten-free pasta and zoodles come together in a creamy coconut parmesan sauce with diced chicken for added protein. There’s no better way to cut your carbs than with this tasty Zoodle Alfredo.


Ingredients

  • 2 Tbsp olive oil
  • 1 shallot, finely diced
  • 1 Tbsp garlic puree
  • 2 chicken breasts, cubed
  • 2 oz gluten-free spaghetti (uncooked)
  • 1 (15 oz) can coconut milk or heavy cream
  • 1 cup parmesan or nutritional yeast
  • Salt and pepper, to taste
  • 2 medium zucchini, spiralized
  • 1/4 cup finely chopped parsley
  • 1 cup cherry tomatoes, diced
  • 1/4 cup fire-roasted corn
  • 1/4 cup finely chopped cilantro

Instructions

Drizzle olive oil into a GoodCook Deep Saute Pan, heat over medium-high heat.
Add garlic puree and shallot to pan. Cook until aromatic, about 2-3 minutes, then add chicken to pan. Once chicken is nicely browned, add spaghetti noodles to the center of the pan.
Add coconut milk and 1/2 cup parmesan. Cover, bring to a boil and cook, stirring occasionally, until pasta is al dente.
Add zoodles to pan, gently toss with a pasta fork. Return to stove, cover and cook until zoodles are heated through. Season to taste. Garnish with 1/2 cup parmesan and parsley. Serve and enjoy!

I love One Pot Pastas. They make dinnertime so easy in my house because they don’t use a dozen of different dishes and pots and pans to prepare and they’re usually really quick to make. Also, like this 5-Ingredient Creamy Chicken Alfredo, they don’t require a ton of ingredients, or weird random things that I don’t usually have on hand already.

This 5-Ingredient Creamy Chicken Alfredo is completely a pantry meal for me. I always have pasta in my pantry and it is pretty unusual that I don’t have rotel in there as well. Chicken, cilantro, cream, and cheese are also on my weekly shopping list because they’re versatile and can add a lot of flavor to the simplest of meals.

Pantry meals are great because I think they help keep the budget on track since you’re relying on simple, basic ingredients to prep a meal. Pasta can really help stretch a meal (and a small amount of meat) a long way.

This recipe comes together really quickly. First, you’ll season some chicken with your favorite Taco Seasoning. Store-bought works great, or you can throw together a batch of this Spicy Taco Seasoning and keep it on hand in your spice cabinet for lots of other recipes.

I like the Good Cook 11″ Cast Iron Skillet to prep this meal. It browns the chicken up really nicely and it is a nice size for a one pot meal.

Another bonus of cast iron is that it moves effortlessly from stove to oven, if you are prepping a recipe that requires transferring the dish to the oven, or you just want to keep the meal warm while you set the table and prep a salad. Cast iron also looks attractive set on the table before dinner is served.

After browning the chicken, you’ll prep a quick sauce that consists of butter, cream, cheese, and rotel – kind of like a Mexican alfredo sauce. Creamy Alfredo mixed with favorite taco flavors for a 5-ingredient dinner everyone will love!

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 Tbsp taco seasoning
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 cup heavy cream
  • 1/2 cup Mexican cheese blend
  • 1 can Mild Rotel or chopped tomatoes, 2 Tbsp reserved for garnish
  • 8 ounces Penne Pasta, cooked according to package instructions
  • Garnish: 2 tablespoons chopped fresh Cilantro Leaves

Instructions

Pat the chicken dry on both sides with a paper towel. Sprinkle with the taco seasoning on all sides. Heat the olive oil in a cast iron pan over medium heat. Add the seasoned chicken to the pan and cook, turning once, until the chicken is completely cooked through (about 5 minutes per side). Remove chicken from the pan, place on a plate, cover with foil. Add the butter to the pan that the chicken was cooked in and melt over medium heat. Slowly add the heavy cream, whisking to incorporate all the seasonings and browned bits left behind from cooking the chicken. Whisk constantly and cook for about 2 minutes. Add the cheese, rotel (reserving 2 tablespoons for garnish), and stir until thickened and the cheese is melted. Stir in the cooked pasta and reduce heat to low. Remove chicken from the foil covered plate, slice into strips. Place the sliced chicken on top of the pasta and sprinkle with reserved rotel and optional cilantro garnish for a pop of color. Serve immediately.

Oven Toasted Ravioli

Perfect as an appetizer or finger-food dinner, frozen ravioli becomes crispy, cheesy bites when baked in the oven.

Ingredients

  • 1 (13 oz) package of frozen ravioli, any flavor
  • 1/4 cup olive oil
  • 1/2 cup shredded parmesan cheese
  • black pepper to taste
  • 2 Tbsp fresh chopped parsley
  • 1 (15 oz) jar marinara sauce for dipping

Instructions

In a bowl, toss ravioli olive oil together. Sprinkle with cheese and black pepper. Place in a single layer in a large baking pan (or parchment-lined baking sheet). Bake in the oven at 350 F for 20-25 minutes until toasted. Garnish with parsley. Dip in marinara sauce! Enjoy!
