Hot Baked Pizza Meatball Subs

Not yo’ mamas meatball sub! We’ve added pepperoni and lots of mozzarella, turning this classic into an irresistibly hearty eat.

  • Cook Time: 25
  • Total Time: 35 minutes
  • Yield: 6

Ingredients

  • 2 tablespoons olive oil
  • 7 cloves garlic
  • 2 tablespoons sugar or honey
  • 28 ounces crushed, fire-roasted tomatoes
  • 1 teaspoon Italian Seasoning
  • 1/2 teaspoon red pepper flakes
  • 32 ounces frozen Italian Meatballs
  • 7 ounces pepperoni, diced
  • 1 teaspoon salt
  • 6 sub rolls or baguettes, sliced sandwich-style
  • 18 slices fresh mozzarella, thinly sliced
  • 1/2 cup fresh basil, chopped

Instructions

Preheat oven to 400 degrees. In a large pot, heat olive oil over medium-high heat. Add garlic, sugar, tomatoes, Italian Seasoning, red pepper flakes, meatballs, pepperoni, and salt. Heat until meatballs are warmed through. Spoon meatballs into the bottom half of each sub roll. Top each with 3 slices of mozzarella. Place in preheated oven and bake until the mozzarella is barely browned, about 13-17 minutes. Remove from oven, sprinkle fresh basil over the top of the sub rolls. Serve and enjoy!

Chicken Parmesan

Bring a classic to your dinner table tonight! A can of tomato sauce is quickly transformed into the best Chicken Parmesan you’ve ever tasted. This simple recipe is one that everyone will love!

Ingredients

  • 4 chicken breasts
  • 1 ½ cups parmesan
  • 1 ½ tablespoons Italian Seasoning
  • 1 egg
  • 1 stick (1/2 cup) butter, melted
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon chili powder
  • 1 teaspoon garlic salt
  • 1 cup shredded mozzarella cheese
  • ¼ cup basil
  • 2 cups fettuccine, cooked

Instructions

Preheat oven to 350 degrees. Rinse chicken breasts under cool water and pat dry. In a large bowl, stir together parmesan and ½ tablespoon of Italian seasoning. In a second large bowl, whisk together egg and butter. Dip chicken in egg mixture, then coat in parmesan mixture. Place on a parchment-lined baking sheet. Bake chicken in preheated oven for 18-20 minutes. As the chicken cooks, stir together the tomato sauce, 1 tablespoon of Italian Seasoning, chili powder, and garlic salt. Drizzle this sauce over the top of each chicken breast. Sprinkle with shredded mozzarella, then bake chicken for an additional 10 minutes, or just until the cheese is melted. Garnish with basil and serve over fettuccine. Enjoy!

Our Favorite Basic Pizza Dough

Start any meal off right with a no-fail basic pizza dough. Soft and slighty sweet, this simple homemade pizza dough is perfect rolled thin and cooked until crispy, or rolled thick and baked until chewy.

  • Prep Time: 30
  • Cook Time: 10
  • Total Time: 40 minutes

Ingredients

  • 1 cup warm water
  • 1 tablespoon sugar
  • 1 tablespoon olive oil
  • 1 tablespoon instant yeast
  • 1 teaspoon salt
  • 2-3 cups flour

Instructions

In a large bowl, whisk together water, sugar, olive oil, yeast, and salt. With a wooden spoon, stir in the flour 1 cup at a time, until the dough begins to pull away from the sides of the bowl. Turn the dough out onto a clean, lightly floured work surface. Knead the dough 20-30 times, until it becomes soft and elastic. Cover the dough with a clean cloth, allow it to rest for 15 minutes. Roll out, place dough on a lightly greased Good Cook pizza pan. Top as desired. Bake in an oven preheated to 475 degrees for 10-12 minutes, just until the cheese begins to bubble.
