Sheetpan Turkey Taco Burgers
- 2 sweet potatoes, peeled and wedged
- 2 Tbsp olive oil
- Salt and pepper
- 1 lb ground turkey
- 1 packet taco seasoning
- 1 avocado, peeled and pitted
- Juice of 1 lime
- 1 bunch green onions
- halved cherry tomatoes
- fire-roasted corn
- pico de Gallo or salsa
- sour cream
Heat oven to 350 degrees.
Spray sweet potatoes with olive oil, salt and pepper. Set aside.
In a large bowl, combine turkey and taco seasoning.
Form turkey into burgers and place on a sheetpan. Place sweet potato wedges around burgers.
Bake for 20-25 minutes.
In a medium bowl, combine avocado, lime juice, green onions, salt and pepper to taste.
OPTIONAL: Top with halved cherry tomatoes and fireroasted corn or fresh salsa and sour cream.
