Ingredients

  • 8 ripe avocados
  • 4 Roma tomatoes, diced 
  • 1 bunch scallions, very finely chopped
  • 3 cloves garlic, very finely chopped
  • 1/4 cup finely chopped cilantro
  • Juice of 1 lemon
  • Juice of 2 limes
  • 2 Tbsp olive oil
  • 1 (1 oz) packet Ranch dry mix
  • Tortilla chips (for serving)

Directions

Bacon and Brown Sugar Straws

Brown Sugar glazed bacon straws are tightly wrapped and twisted inside puff pastry then baked to crispy perfection!

  • Prep Time: 15
  • Total Time: 15
  • Yield: 24

Ingredients

  • 1 Sheet of Puff Pastry
  • 12 Strips of Bacon
  • 1/2 teaspoon Chopped Rosemary
  • 1/3 Cup Brown Sugar
  • 1/8 teaspoon Cayenne Pepper
  • 1 tablespoon water

Instructions

Slice the sheet of puff pastry into thin strips and cut each piece of bacon in half. Layer one strip of bacon on top of one strip of puff pastry and then twist the bacon and puff pastry into a straw-like twisted shape. Cover a baking pan with aluminum foil and insert a cooking rack. Lay each twisted bacon straw on top of the rack and set aside. Mix in a bowl the fresh rosemary, brown sugar, cayenne pepper and water to form a glaze. Brush the glaze onto each straw. Bake for 25 minutes at 380 degrees F. Remove pan from oven and add more glaze if you wish, turning the straws over if needed. Bake again at 400 for another 5-8 minutes or until golden and crispy looking! Allow to cool a little and then serve!

  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels (fresh or thawed from frozen)
  • ½ red pepper, diced
  • 1 ripe mango, diced

In a medium bowl, toss avocados with lime juice, salt, and jalapenos. Add black beans, corn, red pepper, mango, and cilantro. Stir gently to combine. Check for seasoning and add more salt if needed. Serve with chips or on grilled chicken or fish.
