Tips for Buying Shrimp

  • Buy shrimp in the frozen section of your grocery store or at the seafood counter.
  • If you buy from the seafood counter, look for raw shrimp that is deveined and already peeled (with tails on or off – your choice).
  • For frozen shrimp, look for frozen jumbo shrimp that is peeled and deveined. About 30 minutes before you plan to cook, place the frozen shrimp in a colander and run the shrimp under cold water to quickly defrost.

Remove the tails or not?

That’s a personal preference – leaving the tails on adds more flavor and the shrimp doesn’t curl up as much, but some prefer the ease of eating shrimp with the tail already removed.

  • Add the remaining tablespoon of oil to the pan. Heat until you see it smoking.  Add garlic and ginger, cooking until fragrant. Add the chopped veggies and stir fry them for about 4-5 minutes.  In a small GoodCook mixing bowl, combine the chili paste and honey.
  • Add the shrimp, chili sauce, and green onions. Toss until the shrimp and veggies are coated, about 2-3 minutes. Garnish with sesame seeds.

Sweet Chili Shrimp Stir-Fry

Ingredients

  • 1 lb shrimp, cleaned and deveined
  • 2 Tbsp vegetable oil
  • 1 Tbsp garlic, minced
  • 1 teaspoon ginger, minced
  • 1 1/2 cups yellow and red peppers, chopped
  • 1 cup broccoli, chopped roughly
  • 1 cup snap peas
  • 1/2 cup chili-garlic paste
  • 1 cup honey
  • 1/2 cup green onion, chopped
  • Sesame seeds, garnish (optional)

Instructions

In stir-fry pan heat 1 tablespoon of oil.  This is to sear the shrimp.  Sear shrimp on each side for about two minutes on medium-high heat.  They should have a light pink color.  Set fried shrimps to the side.

Add the remaining tablespoon of oil to the pan.  Heat until you see it smoking.  Add garlic, ginger and cook until fragrant.  Add the chopped veggies and stir fry them for about 4-5 minutes.  In a small bowl mix together chili paste and honey.

Add shrimps, chili sauce, and green onion.  Toss until all of the shrimps and veggies are coated; about 2-3 minutes. Garnish with sesame seed.

Serve sweet chili shrimp stir fry with your choice of rice or noodles.
