How to make parmesan chicken with artichoke hearts
Preheat the oven to 375°F. In a small GoodCook® mixing bowl, add salt, pepper, rosemary, and thyme.
Place the chicken on a non-stick baking pan, drizzle with 1 teaspoon of oil and season with half of the herb mixture.
In a large GoodCook® mixing bowl, combine artichokes, onion, chicken stock, garlic, and the remaining oil and herb mixture. Toss to ensure proper coating. Arrange the artichoke hearts and onions around the chicken, sprinkle with cheese and top with the lemon slices.
Roast for 20-25 minutes, and use a GoodCook® thermometer to measure the temperature of the chicken. The chicken is cooked when the internal temperature is 165°F. Garnish with green onions.

Tips for making the best sheetpan meals

Bring the mixture to a boil, then turn down the heat to simmer, about 20 minutes. Let cool and season with salt before serving.
Serve with a side of zoodles. To make zoodles, Cut the top stalk off of a washed and dried zucchini. Place the cut top on the blade side of the GoodCook® 5 Blade Spiralizer. - 4 chicken breast halves, boneless and skinless
- 3 Tbsp olive oil, divided
- 1 tsp dried rosemary
- 1/2 tsp dried thyme
- 1/2 tsp pepper
- 1 tsp salt
- 2 - 14 oz cans artichoke hearts, drained
- 1 medium yellow onion, chopped
- 2 garlic cloves, minced
- 1/2 cup chicken broth
- 1/4 cup parmesan cheese, shredded
- 1 lemon, sliced
- 2 green onions, thinly sliced
Step 1 –Preheat your oven to 375F. In a small mixing bowl, add salt, pepper, rosemary, and thyme.
Step 2 – Place your chicken on a non-stick baking pan, drizzle with 1 teaspoon of oil and seasoning with half of the herb mixture.
Step 3 –In a large mixing bowl, combine artichokes, onion, chicken stock, garlic, and remaining oil and herb mixture. Give it a good toss to ensure proper coating. Arrange around chicken, sprinkle with cheese and top with lemon slices.
