One Pot Lasagna


  • 1 Tbsp Olive oil
  • 3 cloves garlic, minced
  • 1/2 yellow onion, finely diced
  • 1 1/2 pounds ground Italian sausage
  • 2 Tbsp Italian seasoning
  • 15 oz can diced tomatoes
  • 3 cup tomato juice or Bloody Mary mix
  • 10 oz fresh mozzarella, sliced into 1/4” thick pieces
  • Finely chopped parsley


Heat oil in a large saute pan. Add minced garlic and saute until aromatic. Add diced onion and saute. Add Italian sausage and cook until browned. Once browned, add seasoning and diced tomatoes. Break up lasagna noodles and add them to the pan. Add diced tomatoes and tomato juice bring to a simmer, stirring every 2-3 minutes to keep the noodles from sticking together. After 8-9 minutes, top with mozzarella slices, cover and cook 5 minutes more, until cheese is melted and pasta is al dente.
Garnish with parsley. Serve and enjoy!
