Cut pie crust into 3-inch rounds with a Sweet Creations Nesting Cookie Cutter.
Spray a GoodCook Oversized Mini Muffin Tin with nonstick baking spray. Press pie crust into each cup of the pan.
For the pumpkin pie bites: In a large bowl, combine all ingredients for the pumpkin pie bites. Beat mixture until smooth. Spoon into 16 of the pie-crust lined cups.
For the apple pies: Spoon apple pie filling into 16 more mini cups. In a small bowl, combine crushed graham crackers, butter, brown sugar. Sprinkle atop each mini apple pie.
For the pecan pies: In a large bowl, whisk together butter, brown sugar, corn syrup, vanilla, egg, and pecans. Spoon into remaining pie crusts.
Bake at 350 degrees F for 25-35 minutes, or until the center pecan pies begin to set in the center.
Allow to cool for 10 minutes or so before removing from muffin tin.
