No-Bake Sunshine Lemon Pie is a refreshingly sweet and tart dessert that’s perfect for spring. The light and creamy lemon filling gets a custard-like texture from sour cream and pairs well with a classic graham cracker crust. Serve this irresistible No-Bake Sunshine Lemon Pie on special occasions like Easter and Mother’s Day or anytime you need an easy lemon dessert.

Any dessert recipe that’s easy to make doesn’t require baking and tastes delicious is a winner in our book. This lemon pie is one of those recipes. It comes together quickly and easily, is bursting with delicious lemon flavor and has a wonderfully creamy texture. The lemony custard thickens up in the microwave, so there’s no turning on the oven.

This recipe starts with freshly squeezed lemons, and there’s no better way to extract lemon juice than with the GoodCook Citrus Squeezer. It extracts juice from lemons, limes, and more, and features a comfortable grip for twisting. Infuse more lemony goodness into this pie with the GoodCook Fine Zester Grater, perfect for finely zesting lemon peel.
