Quick Summer No-Bake Treat: Watermelon Cupcakes

Summertime is in full swing and the temps are hot, hot, hot! If you’re trying to stay out of your kitchen, but are craving something sweet, this no-bake recipe for Watermelon Cupcakes is just the recipe you’ve been waiting for! Crisp slices of watermelon are cut into little rounds, then topped with a 3-ingredient white chocolate whipped frosting. That’s it! How to Make Watermelon Cupcakes 

Here’s your ingredient line-up! And look how simple it is. Super basic stuff here. But, sometimes the most simple things make for the most perfect, whippy frosting.
When these three ingredients are whisked together until fluffy, they make this perfect, easy-to-pipe frosting. Light and sweet, it tastes like a white-chocolate flavored fruit dip. If you don’t love white chocolate, feel free to swap in plain vanilla pudding mix, instead.

How to Make Watermelon Cupcakes

To make the cupcakes, simply use a 2-3″ round glass or biscuit cutter to cut watermelon slices into small circles. Since the slices of watermelon are so thick, a handled cutter wouldn’t pass all the way through the melon. But our open-topped cutters offer plenty of space for pressing through extra-thick slices. Once you’ve cut your watermelon slices into little rounds, set them in cupcake wrappers on your desired serving tray. Watermelon Cupcakes

Turn off the oven and make yourself a batch of the cutest cupcakes ever! This easy-peasy recipe turns giant slices of watermelon into cute, crisp watermelon cupcakes. Topped with a creamy white chocolate

pudding whipped topping and a fresh cherry, this easy recipe is sure to become a summertime favorite!

  • 1 large seedless watermelon
  • 1 (16 ounce) container whipped topping
  • 1 (12 ounce) container whipped cream cheese
  • 1 (3.4 ounce) box white chocolate instant pudding mix
  • Fresh or maraschino cherries (for garnish)
  • Rainbow sprinkles
  • Special equipment: 2 ½” round Good Cook biscuit cutter


In a large stand mixer, beat together whipped topping and cream cheese until smooth. Slowly add the instant pudding mix to the bowl and continue to whip until light and fluffy. Transfer this mixture into a large Sweet Creations icing bag, fitted with a large star tip. With a large knife, slice watermelon into 3” slices. With a Good Cook biscuit, cut each slice into 2 ½” rounds. Set each round piece in a cupcake liner, place on serving platter. Pipe whipped topping mixture onto each cupcake. Garnish with rainbow sprinkles and a cherry on top. Serve immediately and enjoy. Or refrigerate for up to 8 hour before serving.
