Microwave Fried Rice with Quinoa

Serves 4

Packed with veggies and your favorite proteins, this almost one-pot recipe will make getting dinner on the table a breeze.

  • 2 cups quinoa
  • ½ cup sliced mushrooms
  • 1 ½ cup broccoli
  • ½ cup diced red pepper
  • 4 slices uncooked bacon chopped
  • ¼ cup soy sauce
  • 2 tsps sesame oil
  • 4 cups vegetable broth
  • 3 eggs
  • 1 cup frozen pea carrot
  • ¼ cup sliced green onions
  • Salt and pepper to taste

Place quinoa, mushrooms, broccoli, red pepper, bacon, soy sauce, sesame oil, and vegetable broth into the GoodCook microwave rice cooker.
Cook on high in microwave for 12 minutes.
Meanwhile, beat eggs into a microwave safe mug with some salt and pepper. When the quinoa is done, remove and mix in the frozen peas and carrots.
Put back into microwave along with the mug of eggs. Cook an additional 2 minutes.
Remove, break up egg, and stir into quinoa.
Add green onions, and season with salt and pepper to taste.
