Kiwi Melon Fruit Salad (served in a Watermelon Basket)

  • 1 large watermelon
  • 1 cantaloupe, halved and seeds removed
  • 12 ripe kiwi fruit
  • 1-pint blackberries
  • 1-pint blueberries
  • 2 cups green grapes
  • Juice of 2 limes
  • 3 Tbsp triple sec (or simple syrup)
  • Pinch of salt
  • 2 Tbsp fresh chopped mint

Wrap a large elastic band down the center of the watermelon. Adjust, so the rubber band is placed vertically in the center of the watermelon.

Place a second large rubber band horizontally down the center of the watermelon.

With a sharp knife, cut into the top right and left quarter of the watermelon, about 1" from the rubber bands, to create a "handle" for your watermelon basket.

With a melon baller, remove watermelon flesh from the cut pieces, the handle, and the bottom "basket" portion of the watermelon—place in a large bowl.

Use the melon baller to cut balls from cantaloupe and kiwi's, as well. Place in a bowl with watermelon, add blackberries, blueberries, and grapes.

In a small bowl, whisk together lime juice, triple sec, sugar, salt, and mint. Drizzle over fruit.

Gently transfer fruit into a watermelon basket. Serve and enjoy!
