- 2 large, ripe tomatoes
- 1 medium-sized ball fresh mozzarella cheese, sliced thin
- 1/2 cup fresh basil leaves
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- salt and pepper
With a sharp knife, gently cut tomatoes into several slices, with each slice going just 2/3 of the way through. Gently press mozzarella slices and fresh basil leaves intro each slice of the tomato. Drizzle with olive oil and vinegar. Salt and pepper, if desired. Serve and enjoy!
