Ultimate Veggie Omelet


  • 2 tbsps olive oil
  • 3 eggs, well beaten
  • 1/2 small onion diced
  • 1 clove garlic, minced
  • 1 cup sliced zucchini
  • 1/2 cup cherry tomatoes halved
  • 2 tbsp fresh chopped basil
  • Feta cheese
  • Fresh thyme, chopped (optional)
  • Sea salt and fresh ground pepper to taste


Heat the oil in a GoodCook® Everyday saute pan. Add the onion and garlic and cook for about one minute. Add zucchini, tomatoes, and basil, salt and pepper, and cook until softened. Transfer to a plate and set aside.
Add the eggs and tilt the pan to create a thin layer of omelet. Cover and cook on low heat for 3 minutes until eggs are set. Add veggies back to pan, on to one side of the egg mixture, fold it over the top. Sprinkle with feta cheese and fresh thyme. Serve.
