Lobster Mac & Cheese

Ingredients

  • 2 fresh lobsters, cooked OR 1lb of cooked lobster meat
  • 1 pound cavatappi, cooked
  • 2 cups heavy cream
  • 2 cups gouda or white cheddar cheese
  • 1 cup shredded parmesan
  • 1 1/2 cups shredded mozzarella
  • 2 tablespoons all-purpose flour
  • 2 cloves minced garlic
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 cups seasoned panko breadcrumbs
  • 1/4 cup melted butter
  • Chopped parsley or chives, for garnish

Instructions

  • Preheat oven to 400 degrees F. 
  • Remove lobster meat from shells with the GoodCook Seafood cracker. Discard shell, place lobster in a large bowl. 
  • Add pasta, cream, cheeses, flour, garlic salt and pepper. Stir until well mixed. Transfer to a 9x13” baking dish.
  • In a small bowl, stir together breadcrumbs and melted butter. Remove foil from pasta, sprinkle breadcrumb mixture over pasta. Bake for 35-40 minutes, until breadcrumbs turn a light golden brown. 
  • In a small bowl, stir together breadcrumbs and melted butter. Remove foil from pasta, sprinkle breadcrumb mixture over pasta. Bake for 15 minutes more, until breadcrumbs turn a light golden brown. If lighter breadcrumbs are desired, broil until golden.
  • Garnish with chopped parsley.
