Preheat oven to 400 degrees F.
In a large microwave-safe bowl, add coconut oil, butter, maple syrup, lemon zest, orange zest, cayenne and half of garlic puree. Cook in microwave for 1-2 minutes, until mixture is bubbling.
Add carrots to bowl and toss. Transfer to a GoodCook OvenFresh oval ceramic pan. Roast in oven 20-25 minute or until tender.
In a small bowl, stir together lemon and orange juice, remaining teaspoon of garlic puree and yogurt. Drizzle over warm carrots. Top with Fruit & Nut mixture and parsley. Serve and enjoy!
