Our Favorite 3-Ingredient Shortbread Cookie Recipe. Totally Foolproof!
Baking season is officially here! The aisles of craft shops and grocery stores are full of fall attire. Whether we’re ready for it or not, the cool autumn weather will arrive in a matter of weeks, with winter welcoming itself in on it’s heels. Here we go, kitchen friends! It’s time for us to shine, shine, shine!

Whether you love or loathe baking, having a few simple, foolproof recipes up your sleeve is a total lifesaver this time of year. Last minute party invites, bake sales and giftable cookie plates will all need to be prepped in the coming months. And what better way to do that than with a 3-ingredient shortbread recipe?

We are absolutely ga-ga over this simple, works-every-time, buttery shortbread. Calling for just three ingredients, you’d think it would be a blah version of traditional cookies. But the flavor is indistinguishable from storebought brands!

Use this recipe to make little tea time cookies, or swap it in for sugar cookies. Not overly sweet, it’s great when topped with buttercream frosting or drizzled-on icing. We’ve rolled this recipe, dropped it onto baking sheets with cookie scoops, baked it into 1/2″ thick morsels and have even cut it into mini letters with our Sweet Creations 38-Piece Alphabet Numbers Cookie and Fondant Cutter Set. The recipe works perfectly, no matter how you prepare it!

While baking, the dough barely puffs up, so you can make cookies that look just like the cookie cutters you used–no misshapen cookies with this recipe! If you’d prefer to make dropped cookies, be sure to press down the tops of each cookie with a fork to get flat, evenly browned cookies.

Don’t feel like frost them? No worries! The vanilla-scented dough makes a big batch of not-too-sweet treats. Or, feel free to roll the dough in sprinkles or sugar for extra-easy decor. These foolproof cookies are a perfect palette for all kinds of creativity!

3-Ingredient Shortbread Cookies

Whip up a batch of buttery shortbread with this simple recipe. Perfect for cutting into any shape you want, the dough holds its shape without spreading too much while baking.

  • Prep Time: 10
  • Cook Time: 10
  • Total Time: 20 minutes


  • 1 cup (2 sticks) butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • ½ teaspoon vanilla


Step 1: Preheat oven to 350° F. Line a Good Cook Air Perfect cookie sheet with parchment paper. Step 2: In a large bowl, cream together butter and sugar. Add flour and continue to mix until mixture forms a soft dough. Roll dough 1/8-inch thick on a surface dusted with flour or powdered sugar with a well-dusted rolling pin. Use the Sweet Creations Letter Cookie Cutters and press into the dough. Gently pull up the cutter to reveal your dough letters. Use extra dough around letters to make as many extra letters as you can! Bake for 2-4 minutes, or just until the letters begin to turn a light golden brown. Sneak into your child’s lunchbox! Larger cookies will need to be baked for 6-10 minutes, or until golden brown.
