Watermelon Fruit Pizza
Watermelon Fruit Pizza | A fresh twist on fruit pizza. Mix up our 5-ingredient Sugar Cookie crust, pat it down on a pizza stone, then bake and top with fresh strawberries and kiwi. Once it’s sliced, these pretty pieces look just like a watermelon!
- Nonstick baking spray
- 1/2 cup Challenge Butter, softened
- 3 cups powdered sugar
- 1 egg
- 1 teaspoon vanilla
- 1 1/4 cup flour
- 8 oz Challenge Cream Cheese, softened
- 7 oz marshmallow fluff
- 2 cups strawberries, hulled and sliced
- 1/2 cup raspberry or strawberry jam
- 6 kiwi, peeled and sliced and halved
- 2 Tbsp mini chocolate chips
Spray a GoodCook pizza stone or aluminum pizza pan with nonstick baking spray.
In a large bowl or stand mixer, combine butter, powdered sugar, egg, vanilla and flour. Mix well, form into a ball. If crumbly, add 1-2 Tbsp of milk, just enough until dough holds together.
Press dough onto prepared pizza pan, forming a nice round circle, about 1/2” thick. Bake at 350 degrees F for 20 minutes, or just until the center has set. Remove and cool completely.
In a stand mixer, beat together cream cheese and marshmallow fluff. Set aside.
Stir together strawberries and jam.
To assemble, spread cream cheese mixture over crust. Arrange 2 layers of kiwi sliced around the outer edge of the crust. Fill center with strawberry mixture. Sprinkle with chocolate chips. Serve and enjoy.
