Tater Tot Taco Casserole

Serves 6-8     adjust servings

Perfect as an easy weeknight dinner or potluck meal, get this flavorful tater tot taco casserole on your table tonight!  


  • 1 1/2 lbs ground beef
  • 1 (15 oz) can black beans, drained
  • 1 (15 oz) can fireroasted corn, drained
  • 1 cup salsa
  • 1 packet taco seasoning
  • 1 can nacho cheese soup
  • 2 cups shredded cheddar cheese
  • 4-5 cups frozen tater tots
  • 1 cup pico de gallo
  • 1/2 jalapeno, finely sliced
  • 1/2 cup cilantro, finely chopped


Heat oven to 400 degrees F.
On the stovetop, brown ground beef in the 12-inch GoodCook cast iron skillet.
Add black beans, corn, salsa, taco seasoning, nacho cheese soup and shredded cheese. Top with tater tots. Bake in preheated oven for 25-30 minutes, until tater tots are browned and sauce begins to bubble around the edges of the pan.
Top with pico, jalapeno and cilantro. Enjoy!
