With our one-pot formula, you can easily make a variety of different dinners using ingredients you already have on hand. It’s a simple formula that calls for 1 cup of cooked protein, 2 cups of veggies, 8 ounces of pasta and 3 cups of liquid. Combine all of the ingredients in one pot, cook until pasta is al dente, and dinner is done. There’s no guesswork, ingredients are easy to substitute, and your whole family will love these flavorful and satisfying meals.

One-Pot Prep

Recipe substitutions

  • Don’t have ground sausage? Substitute ground beef, turkey or chicken.
  • If you’re out of garlic, use 1/8 teaspoon garlic powder for every clove of garlic the recipe calls for.
  • You can use tomato sauce or fresh tomatoes in place of the diced tomatoes.
  • Any type of pasta can replace the lasagna noodles in this recipe.
  • If you don’t have tomato juice, use vegetable juice, broth or Bloody Mary mix.

How to make one-pot lasagna

  • In a GoodCook Deep Sauté Pan, heat olive oil over medium-high heat. 
  • Add garlic and onions, and sauté for 2-3 minutes, then add sausage and brown for 3-4 minutes more.

One Pot Lasagna

Ingredients

  • 1 Tbsp Olive oil
  • 3 cloves garlic, minced
  • 1/2 yellow onion, finely diced
  • 1 1/2 pounds ground Italian sausage
  • 2 Tbsp Italian seasoning
  • 15 oz can diced tomatoes
  • 3 cup tomato juice or Bloody Mary mix
  • 10 oz fresh mozzarella, sliced into 1/4” thick pieces
  • Finely chopped parsley

Instructions

Heat oil in a large saute pan. Add minced garlic and saute until aromatic. Add diced onion and saute. Add Italian sausage and cook until browned. Once browned, add seasoning and diced tomatoes. Break up lasagna noodles and add them to the pan. Add diced tomatoes and tomato juice bring to a simmer, stirring every 2-3 minutes to keep the noodles from sticking together. After 8-9 minutes, top with mozzarella slices, cover and cook 5 minutes more, until cheese is melted and pasta is al dente.
Garnish with parsley. Serve and enjoy!

  • Replace the cream with 3/4 cup of sour cream and an additional ¾ cup of broth if you want a tangier taste.
  • For more veggies, add 2 cups of sliced mushrooms or baby spinach when you add the meatballs to the pot

One-Pot Meatball Stroganoff #OnePotChallenge

A simple stroganoff you can make in less than 20 minutes. We’ve used cream to thicken the sauce, but if you love that tangy taste of sour cream, swap the cream for 3/4 cup of sour cream and 3/4 additional cup of broth. For more veggies, add 2 cups of sliced mushrooms or baby spinach when you add the meatballs to the pot, saute for a few minutes, then add the broth. This recipe is so easy to customize, feel free to swap in whatever meat, pasta noodles or veggies you already have in your pantry or fridge. You can’t go wrong with this simple One-Pot formula!

Ingredients

  • 1 Tbsp olive oil
  • 2-3 Tbsp chopped garlic (or garlic powder)
  • 1/4 cup diced onion
  • 2 cups frozen meatballs
  • 2 cups beef broth
  • 1 cup heavy cream or half-and-half
  • 1 Tbsp Worcestershire sauce
  • 1/2 teaspoon dijon or ground mustard
  • 1 cup grated parmesan cheese
  • 8 oz egg noodles
  • 1 Tbsp chopped fresh parsley (optional)

Instructions

In a large pot or deep-sided skillet, heat olive oil over medium-high heat. Add garlic and onions, saute for 2-3 minutes, then add meatballs and brown 3-4 minutes more. Add broth, cream, Worcestershire, Dijon, and cheese. Stir in noodles. Cover and cook on the stovetop. Bring to a boil over medium-high heat, then stir and reduce heat to medium. One Pot Creamy Chicken Zoodle Alfredo

Serves 4     adjust servings
One Pot Creamy Zoodle Alfredo is a creamy and delicious one pot dinner that’s on the table in only 15 minutes. An irresistible combo of gluten-free pasta and zoodles come together in a creamy coconut parmesan sauce with diced chicken for added protein. There’s no better way to cut your carbs than with this tasty Zoodle Alfredo.


Ingredients

  • 2 Tbsp olive oil
  • 1 shallot, finely diced
  • 1 Tbsp garlic puree
  • 2 chicken breasts, cubed
  • 2 oz gluten-free spaghetti (uncooked)
  • 1 (15 oz) can coconut milk or heavy cream
  • 1 cup parmesan or nutritional yeast
  • Salt and pepper, to taste
  • 2 medium zucchini, spiralized
  • 1/4 cup finely chopped parsley
  • 1 cup cherry tomatoes, diced
  • 1/4 cup fire-roasted corn
  • 1/4 cup finely chopped cilantro

Instructions

Drizzle olive oil into a GoodCook Deep Saute Pan, heat over medium-high heat.
Add garlic puree and shallot to pan. Cook until aromatic, about 2-3 minutes, then add chicken to pan. Once chicken is nicely browned, add spaghetti noodles to the center of the pan.
Add coconut milk and 1/2 cup parmesan. Cover, bring to a boil and cook, stirring occasionally, until pasta is al dente.
Add zoodles to pan, gently toss with a pasta fork. Return to stove, cover and cook until zoodles are heated through. Season to taste. Garnish with 1/2 cup parmesan and parsley. Serve and enjoy!

Oven Toasted Ravioli

Perfect as an appetizer or finger-food dinner, frozen ravioli becomes crispy, cheesy bites when baked in the oven.

Ingredients

  • 1 (13 oz) package of frozen ravioli, any flavor
  • 1/4 cup olive oil
  • 1/2 cup shredded parmesan cheese
  • black pepper to taste
  • 2 Tbsp fresh chopped parsley
  • 1 (15 oz) jar marinara sauce for dipping

Instructions

In a bowl, toss ravioli olive oil together. Sprinkle with cheese and black pepper. Place in a single layer in a large baking pan (or parchment-lined baking sheet). Bake in the oven at 350 F for 20-25 minutes until toasted. Garnish with parsley. Dip in marinara sauce! Enjoy!
