One-Pot Creamy Tuscan Pasta is an easy one-pot recipe full of comforting Italian flavors. Lean chicken, sundried tomatoes, spinach and pasta come together with a creamy, cheesy sauce—it all cooks up in a GoodCook Deep Sauté Pan. How to make One Pot Creamy Tuscan Pasta

  • Sauté diced chicken in olive oil until cooked through. Remove from the pan.
  • Add olive oil and sauté chopped onion until soft.
  • Add the sundried tomatoes, garlic and Italian seasoning and sauté for one minute.
  • Add the broth, pasta and frozen spinach and bring to a boil. Lower the heat and continue cooking for 10 minutes.
  • Add the cream and cooked chicken and bring to a simmer. Let it simmer for about 2 minutes, then add the parmesan cheese and cook until melted. Season with salt and pepper and serve it with a GoodCook Melamine Classic Pasta Server.

One-Pot Creamy Tuscan Pasta

Serves 4     adjust servings

Ingredients

  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 1/2 lb chicken breasts, diced
  • 3 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes in oil
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 1 cup parmesan
  • 8 oz fettuccine (uncooked)
  • 1 1/2 cups baby spinach

Instructions

In a large pot or deep sided skillet, heat olive oil over medium-high heat. Sprinkle chicken with salt and pepper, add to pot, browning until cooked through.

Add garlic to pot, cook 1 minute, or until aromatic.

Add sun-dried tomatoes, cream, parmesan and fettuccine to pot.

Cover and bring this boil, stir, then turn heat to medium-low. Continue stirring every few minutes. Cook 12-14 minutes, until pasta is al dente.

Stir in spinach. Cook for 1 minute more, until spi

It’s a simple formula that calls for 1 cup of cooked protein, 2 cups of veggies, 8 ounces of pasta and 3 cups of liquid. Combine all of the ingredients in one pot, cook until pasta is al dente, and dinner is done. Recipe Swaps

  • Don’t have frozen meatballs? Substitute Italian sausage, ground beef, turkey or chicken.
  • If you’re out of garlic, use 1/8 teaspoon garlic powder for every clove of garlic the recipe calls for.
  • If you don’t have grated parmesan cheese or if you’re vegan, substitute nutritional yeast for the grated parmesan.
  • An equal amount of vegetable broth can be used in place of the beef broth.
  • From fettucine to penne to gnocchi, any pasta can replace the egg noodles in this recipe.
  • Replace the cream with 3/4 cup of sour cream and an additional ¾ cup of broth if you want a tangier taste.
  • For more veggies, add 2 cups of sliced mushrooms or baby spinach when you add the meatballs to the pot

How to Make One-Pot Meatball Stroganoff

  • Garnish with parsley, if desired.

One-Pot Meatball Stroganoff #OnePotChallenge

A simple stroganoff you can make in less than 20 minutes. We’ve used cream to thicken the sauce, but if you love that tangy taste of sour cream, swap the cream for 3/4 cup of sour cream and 3/4 additional cup of broth. For more veggies, add 2 cups of sliced mushrooms or baby spinach when you add the meatballs to the pot, saute for a few minutes, then add the broth. This recipe is so easy to customize, feel free to swap in whatever meat, pasta noodles or veggies you already have in your pantry or fridge. You can’t go wrong with this simple One-Pot formula!

Ingredients

  • 1 Tbsp olive oil
  • 2-3 Tbsp chopped garlic (or garlic powder)
  • 1/4 cup diced onion

  • 1 cup heavy cream or half-and-half
