Asparagus Ham and Potato Fritatta

Asparagus, Ham & Potato Fritatta
  • Prep Time: 10 minutes
  • Cook Time: 60 minutes
  • Total Time: 1 hour 10 minutes

Ingredients

  • 2 red potatoes
  • 7 eggs
  • 2 tablespoons flour
  • 1/4 cup milk or cream
  • 3/4 teaspoon salt
  • 2 tablespoons butter
  • 1/4 cup tablespoons onions, chopped
  • 1 garlic clove, chopped
  • 1/3 cup asparagus
  • 1/2 cup ham, cut into chunks
  • 1/4 cup havarti, gruyere, or white cheddar cheese, cut into chunks
  • fresh ground pepper
  • fresh chopped parsley

Instructions

Pierce potatoes with a fork and cook in microwave for 3-4 minutes, or just until tender. Remove and cut into bite-sized chunks.

In a large bowl, whisk together eggs, flour, milk, and salt. Set aside.
Place a Good Cook 10-inch skillet or cast iron skillet on a large stove burner. Turn heat to medium.
Melt butter in the skillet, add onions, garlic, and chopped potatoes. Cook until the onions are caramelized and slightly golden brown.
Pour the egg mixture into the skillet. Sprinkle asparagus, ham, and cheese chunks around the skillet. Sprinkle with fresh-ground pepper. Immediately turn the heat to low. Cover skillet with a lid (or a large plate). Doing so will allow the frittata to cook evenly through the center, without burning on the bottom. Leave covered and allow to cook over low heat for 10-12 minutes, or until the center of the frittata is set. Remove from heat and allow to set for 1-2 minutes before slicing and serving. Garnish with fresh chopped parsley, if desired.

Nutella Stuffed French Toast

A twist on a breakfast classic combines your favorite hazelnut chocolate spread with fresh strawberries. There is no doubt that this week become your new weekend splurge.

Ingredients

  • 4 slices Texas Toast
  • ½ cup Nutella
  • 1 egg
  • 2 Tbsp milk
  • 1 Tbsp almond flour (optional)
  • 1 teaspoon vanilla
  • ¼ cup butter
  • 1 cup strawberries
  • ¼ cup maple syrup
  • 1 Tbsp powdered sugar

Instructions

Whisk together egg, milk and vanilla. Dip open-facing sides of toast in the egg mixture. Sprinkle with almond flour. Melt butter in a nonstick skillet over medium-high heat. Cook egg-coated sides of the toast in the skillet until golden brown. Transfer to a plate and cool slightly. Microwave strawberries and maple syrup together for 90 seconds. Drizzle over French Toast. Sprinkle with powdered sugar. Serve and enjoy!

Puff pastry works perfectly and takes about 1/100th of the time to make. I cut this recipe down to fit into a 12 cup Nonstick Mini Muffin Pan. It’s the perfect amount for an afternoon snack or served alongside your favorite cup of tea.

I even streamlined this recipe enough that you don’t need to make a separate glaze and filling. One mixtures does the job. Spoon a small amount into the bottom of each cup and use the remaining to spread over the puff pastry before you roll it. This recipe takes no time to get into the oven. Small Batch Orange Pecan Mini Sticky Buns made with puff pastry and scented with orange and honey.

Ingredients

  • 1⁄2 cup butter, room temperature 1⁄4 cup light brown sugar
  • 2 Tablespoons honey
  • 1⁄4 teaspoon salt
  • 1 teaspoon orange zest
  • pinch cinnamon
  • 1⁄4 cup pecans, chopped
  • 1 sheet store­bought puff pastry, thawed

Instructions

Preheat oven to 400°. In a small bowl, mix together butter, brown sugar, honey, salt, orange zest, and cinnamon. Place one teaspoon of butter mixture into bottom of mini muffin tin. Sprinkle a few pecan pieces on top. Roll out puff pastry on a floured board. Spread remaining butter mixture over the dough. Sprinkle remaining pecan pieces. Roll half of the dough up to the middle. Roll the second half to meet the first. Slice into 12 1­inch pieces. (You may have some scraps.) Place the rolled dough in the prepared muffin tins. Press gently into the butter mixture. Place muffin tin on a baking sheet lined with foil. (Just in case you some overflow.) Bake for 12 to 15 minutes or until golden brown and bubbling. Let sit in the pan for 3 minutes, then carefully turn out to cool.

You love your mama. After all, she fed you, clothed you, and gave you some of your snazzy style. Which is why she deserves something extra-special for Mother’s Day this year.

When it comes to Mother’s Day, it’s so easy to get stuck in a rut. There’s the classic corsage you can pin on her Sunday dress, the card that tells her how much you care. Then, there’s breakfast in bed, where you wake her, offer her a tray of treats, and start her day off right. Sounds a little too traditional for you? Well, of course it does! Because, after all, you’re not just any kid. You’re the kid yo’ mama loves. Which is why we thinks breakfast in bed is a great idea…but it’s gotta be special. Extra special. As special as you. And your mama. So, we’ve gone ahead and turned the usual plate of pancakes into it’s own sweet way to say “I Love You.”

Our recipe for these beautiful Strawberry Banana Pancakes is so easy to whip up. Simply put all the ingredients into a blender, then pour the batter into our Silicone Pancake Molds. You’ll have a plate full of heart-shaped pancakes in no time at all!

But that’s not enough. Because you love yo’ mama a LOT. We get it.
So, we’re gonna show you how to top those pancakes with adorable, heart-shaped strawberries. They’re easy to make and look stunning on a steaming plate of heart-shaped flapjacks.

To make these heart-shaped strawberries,
wash your strawberries, and grab a Good Cook non-stick paring knife.

Pick up one strawberry (you’ll want to make sure it’s got a nice, pointy tip at the bottom), then slice the green leaves from the top of the strawberry by making a rounded “V” cut just under the “root” of the greens.

Slice the strawberry in half, and you’ll have two little heart-shaped strawberries that look just like this!

Finish off your berry patch, top your pancakes, and tell your mama you love her!
