Oh-so Delicious Chicken Taco Lettuce Wraps

The beauty of these Chicken Taco Lettuce Wraps is how quickly they come together. In just 20 minutes you have a delicious dinner ready to serve. To get started you’ll need your Good Cook Classic Saute Pan. We used ground chicken but ground turkey or beef work just as well here. While the meat cooks, prep your favorite taco toppings and clean the lettuce leaves. Our favorite tool for the job is a Good Cook 5-inch Santoku Knife. Our favorite way to serve is taco bar style! Chicken Taco Lettuce Wraps

Ingredients

  • 2/3 cup plain Greek yogurt
  • 1 tablespoon taco seasoning
  • 1 lime, juiced
  • 1 pound ground chicken
  • 1/2 tablespoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 1/2 teaspoons garlic salt
  • 1 teaspoon fennel seed (optional)
  • 8 large romaine leaves
  • 1 avocado, peeled and diced
  • 1/2 cup diced tomatoes
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup scallions, diced

Instructions

In a small bowl, whisk together Greek yogurt, taco seasoning, and lime juice. Set aside. In a large skillet, brown chicken with onion powder, chili powder, cumin, garlic salt, and fennel seed. Crumble into grounds as the chicken browns. To serve, spread a spoonful of the yogurt mixture into the bottom of each romaine leaf. Top with chicken. Serve topped with avocado, tomatoes, cilantro, and scallions. .

Jalapeno Bacon Corn Dip
I think that appetizers are the best part of any get together. Well, maybe hanging out with friends and family is the best part. But if we are talking about food, I could eat appetizers instead of the main meal almost every day. At least one time per month we have a night of just appetizers at my house. It is always super relaxed, fun, and one of the favorite nights of the week.

Mexican corn dip is the perfect appetizer for any get together. Mexican flavors always seem to be a hit with everyone. Plus cheese, corn and bacon. Yeah, I thought you might agree. Everything about this corn dip sounds delicious. If you have fresh corn available, feel free to use it, but frozen corn works perfectly.

Jalapeno Bacon Corn Dip

Mexican corn dip is super easy to make. I charred the corn in a skillet on the stove, so it would have a little more flavor and texture. Then just mix with the cream cheese, sour cream, cheddar cheese, bacon and the spices. If you are in a hurry, you can just bake until it is bubbly and hot. But you can also make this ahead and just heat in the crock pot. Either way, it will be hot, creamy and perfection.

I brought this Mexican corn dip to a friend’s house last week. There were just 5 of us, and this entire batch of corn dip was gone by the time we left. Considering we also had a full meal, you can just guess how much everyone loved it. I went light on the jalapeno, because my 9 year old was going to be eating it. But if you like it spicy, add more! Serve with tortilla chips or corn chips for dipping, and you will have a happy crowd.
