Heart-shaped Strawberry Banana Pancakes make a sweet start to any day.

Ingredients

  • • 1 banana
  • • 1/2 cup flour
  • • 1 egg
  • • 1/2 teaspoon baking powder
  • • pinch salt
  • • vanilla
  • • 1/2 cup buttermilk
  • • 1 1/2 teaspoons sugar
  • • 4 large strawberries
  • • 1 cup maple syrup
  • • For garnish: fresh strawberries & banana slices

Instructions

Place banana, flour, egg, baking powder, salt, vanilla, buttermilk, sugar and strawberries into a blender. Puree until smooth. Heat a Good Cook Non-stick Double Griddle over medium heat. Spray pan lightly with nonstick cooking spray. Spray a Good Cook Silicone Pancake Mold with nonstick cooking spray, then set it onto the hot griddle. Drizzle batter into the mold and allow batter to cook until bubbles begin to form on the inside of the pancake. Use the silicone handle to gently remove the mold from the pan. Use a Good Cook Pancake Turner to flip the pancake and cook until the opposite side is golden brown. Serve pancakes topped with fresh strawberries, bananas, and maple syrup. Enjoy!

Grilled Watermelon With Yogurt Sauce

Ingredients

  • 6 seedless watermelon triangles
  • 2 tablespoons coconut oil, melted
  • 3/4 cup plain greek yogurt
  • 3 tablespoons raw honey
  • 2 limes, zested and freshly squeezed
  • 1/2 teaspoon sea salt flakes or coarse sea salt
  • 2 tablespoons fresh mint, chopped

Instructions

Preheat an outdoor grill to the highest setting. Brush both sides of watermelon with coconut oil. Place on grill and sear both sides just until the grill marks caramelize and turn golden brown. Remove from grill and place on a serving platter. In a small bowl, stir together yogurt, honey, and lime juice. Whisk until smooth. Spoon over the top of each watermelon slice. Sprinkle with salt. Pineapple Upsidedown Pudding Cupcakes

Ingredients

  • • 1 box yellow cake mix
  • • 1/2 cup melted butter + 8 TBSP butter
  • • 4 eggs
  • • 1/4 cup buttermilk
  • • 1 package instant pudding powder mix, coconut cream flavor
  • • 1 teaspoon cinnamon
  • • 1 teaspoon almond extract
  • • 1 cup brown sugar
  • • 8 pineapple rings
  • • 8 maraschino cherries

Instructions

Preheat oven to 350 degrees. In a stand mixer or large bowl, mix together the yellow cake mix, 1/2 cup of melted butter, 4 eggs, buttermilk, instant pudding mix, cinnamon, and almond extract. Mix until smooth and all ingredients are incorporated. Spray muffin tins generously with nonstick baking spray (the sort with flour added), then place a tablespoon of butter and 2 tablespoons of brown sugar into the bottom of each of the prepared muffin cups. Gently place a marachino cherry into the center of the muffin cup, then place a pineapple ring on top of the cherry. Spoon batter on top of the pineapple slices, filling each cup with batter while leaving about 1/4″ space at the top of each muffin cup. Bake in preheated oven for 21-26 minutes, or until the tops of each cupcake spring back when touched lightly. Remove cupcakes and cool for about 3-5 minutes, then immediately dump them onto a cooling rack, transfer to plates, serve and enjoy!

Caramel Apple Ring Pancakes

Sliced Apple Pancakes – apple rings are dipped in pancake batter and then cooked until golden brown for a sweet breakfast treat. 

Something about fall means cozy weekend mornings at home.  Hanging out in our pajamas and just being lazy.  But those weekend mornings aren’t complete without a delicious and comforting breakfast.  Now if only I could find a way for the breakfast to just appear and the clean up to magically be done.  Then lazy weekends would be complete.

Pancakes are one of my favorite things to have for breakfast.  Super light and fluffy pancakes topped with maple syrup can be hard to beat.  But there is one problem.  They don’t always fill you up.  So today we are fixing that.  We are taking apple slices and turning them into pancakes!  You still get light and fluffy pancakes, but you get a sweet crisp apple in the middle.  A fun little twist with all the apples that are in season right now.

Apple pancakes are super easy to make. You can use whatever your favorite pancake recipe is.  I used a box mix for these.  You just dip the thinly sliced apples in the prepared pancake batter, and place in a hot skillet.  The pancakes cook up and the apple inside stays a little crispy.  Top with warm maple syrup for a breakfast everyone will love!

  • 4 large apples, sliced into 1/4 inch slices
  • 1 batch pancake batter (box mix or homemade)
  • 1 Tbsp brown sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/2 cup maple syrup
  • 3 Tbsp caramel ice cream sauce

Instructions

Heat a non-skillet or griddle over medium high heat. Prepare pancake batter according to package instructions. Stir in brown sugar, cinnamon and vanilla. Dip apples into prepared pancake batter. Let excess batter drip off and place in hot pan. Cook for 3-4 minutes, until golden brown. Flip and cook for 2-3 more minutes. Whisk together maple syrup and caramel sauce. Drizzle over pancakes.

 How to Make Mini Caramel Apple Bites

Make no-fuss DIY Caramel Apple Bites as a fantastic alternative to Caramel Apples this year and let the party in your mouth begin! These easy bites would be perfect for a party or just a sweet afternoon treat! To make these tiny little bombshells of fun, you will need a Good Cook Touch Double Melon Baller to form the apple balls. 

What You’ll Need

How To Make ‘Em

 1. Begin by taking your melon baller and pressing into the sides of an apple to form an apple ball. The ball will be slightly flat on the side of the ball where there is the apple skin.  Work your way through the apples until you have formed as many balls as possible from about 5 or 6 apples. Some of the balls may not turn out quite right depending on where on the apple you form them, so sort through and choose the ones that are the most rounded. Set aside the apple balls. 

2. Insert into each apple ball a cake pop stick. It’s okay if the stick pokes almost through the other side of the apple but try to keep the stick inserted just before this point. 

3. In a microwavable safe container, add an 11oz bag of unwrapped caramel candies and 2 tablespoons of water. Cover the container with a lid and microwave for about 3 minutes, stopping each minute to check the caramels and stir. Once completely melted, you are all set. 

4. Allow the melted caramel to cool a little and if you have time, dry off the apple balls with a towel. Working with apple balls that are as dry as possible will ensure that the caramel sticks better against the all sides of the apple with no skin.

  • TRY THIS: Caramel not sticking to your apples? Gently dry them with a clean paper towel, then toss them in powdered sugar. Voila! Your apples are ready to dip…and the caramel will stick!

5. Set up an assembly line of apple balls with inserted cake pop sticks, melted caramel and candy sprinkles. Dip each ball into melted caramel and twirl all the way around. Next dip each ball covered in caramel into the candied sprinkles. 

Set on a parchment paper and serve immediately! Let the Caramel Apple Bites party begin! Enjoy!

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels (fresh or thawed from frozen)
  • ½ red pepper, diced
  • 1 ripe mango, diced
  • ¼ cup cilantro, finely chopped

Instructions

In a medium bowl, toss avocados with lime juice, salt, and jalapenos. Add black beans, corn, red pepper, mango, and cilantro. Stir gently to combine. Check for seasoning and add more salt if needed. Serve with chips or on grilled chicken or fish.

Lemon Blueberry Pancakes

These lemon scented blueberry pancakes are so fluffy and light. They highlight what is best about the warmer months – fresh berries and lots of bright citrus. You can easily use raspberries or strawberries in place of the blueberries, but blueberries are my favorite in a pancake. I think that they hold up better to heat than delicate red berries.

The secret ingredient for these delectable pancakes is sour cream. It adds an extra layer of tang and a little lift to make them even fluffier.

I like to top mine with some uncooked blueberries, pure maple syrup, and extra butter.

Whisk together flour, sugar, baking powder, baking soda, and salt.

 In another bowl, whisk together sour cream, milk, lemon zest, lemon juice, melted butter, egg, and vanilla.

Gently fold in blueberries. (I like to reserve some uncooked ones for serving.)
