Cast Iron Cherry Pie Crumble

Celebrate cherry season with an irresistibly good Cherry Pie Crumble. A flaky pie crust is piled high with sweet ripe cherries and topped with a buttery cinnamon and sugar crumble. It all bakes up in a GoodCook Cast Iron Skillet for a tasty summer treat. A scoop of vanilla ice cream pairs perfectly with this mouthwatering Cherry Pie Crumble.  

There’s nothing better than the taste of sweet, delicious summer cherries in a pie. Trust us, from-scratch filling is the way to go here! Don’t worry—pitting cherries isn’t as intimidating as it sounds. The GoodCook Profreshionals Cherry Pitter makes quick work of pitting cherries. It removes pits from even the largest cherries and features a recessed holder for both large and small cherries. It also comes with a built-in splatter shield.   

Once the cherries are de-pitted and de-stemmed, they get tossed with sugar, cornstarch, cinnamon and vanilla in a GoodCook Touch 5 Qt Mixing Bowl. 

This pie bakes up in a GoodCook Cast Iron Skillet for a perfectly cooked crust. To save some time, we’re using a prepared crust on the bottom, but go ahead and use homemade if that’s what you prefer. With just 5 ingredients, the crumble topping comes together in minutes. The pie goes in the oven for a little under an hour and comes out bubbly and fragrant. Serve slices warm with a GoodCook Pie Server, and add a dollop of vanilla ice cream on top for the ultimate summer treat.

Recipe Tips and substitutions

  • Place a GoodCook Baking Sheet under the skillet to catch drips.
  • If you don’t have a cast iron skillet, use a GoodCook Pie Pan and the cook time stays the same.
  • If you don’t want a crumble topping, use another round of pie crust on top—just remember to make cuts in the dough for steam to vent out.

How to make Cast Iron Cherry Pie Crumble

  • Press the pie crust in the bottom of a 10” GoodCook Cast Iron Skillet. Tuck the overhanging dough under itself; crimp the edges with a fork.
  • Pit the cherries with a GoodCook Profreshionals Cherry Pitter and place the cherry meat in a GoodCook Touch 5 Qt Mixing Bowl. Add the sugar, cornstarch, 1/2 teaspoon cinnamon and vanilla or almond extract to the pitted cherries. Stir until well mixed and pour into the pie crust.
  • In a GoodCook OvenFresh Stoneware Mixing Bowl, mix together the flour, brown sugar, salt and 1/4 teaspoon cinnamon. Grate the cold butter on a cheese grater, then combine into mixture with a pastry cutter, mixing until a nice crumble forms.
  • Sprinkle crumble atop pie. Bake for 50-55 minutes, checking halfway through to ensure the pie is not over-browning. If needed, tent with a large piece of aluminum foil.
  • Allow to cool for 60 minutes before slicing and serving. Top with scoops of vanilla ice cream, if desired.

Cast Iron Cherry Pie Crumble


Ingredients

  • 1 round prepared pie crust
  • 6 cups fresh cherries
  • 1 1/4 cups sugar
  • 5 Tbsp cornstarch
  • 3/4 teaspoon cinnamon
  • 1/8 tablespoon vanilla or almond extract

  • 1 stick cold butter

Instructions

Heat oven to 375 degrees F. 

Press pie crust in the bottom of a 9” cast iron pan. Tuck the overhanging dough under itself; crimp the edges with a fork.

Remove stems and pits from cherries. Place in a large bowl, add sugar, cornstarch, 1/2 teaspoon cinnamon and vanilla or almond extract. Stir until well mixed. Pour into pie crust.

In a medium bowl, mix together flour, brown sugar, salt and 1/4 teaspoon cinnamon. Grate the cold butter on a cheese grater, then combine into mixture with a pastry cutter, mixing until a nice crumble forms.

How to make No-Bake Lemon Pie

  • Fold in the sour cream. It should be a thick consistency, like custard.
  • Spoon the lemon cream mixture into the graham cracker crust and drizzle with fresh lemon juice before serving.

No-Bake Sunshine Lemon Pie

Serves 8     adjust servings


Ingredients

  • 2-3/4 cups graham cracker crumbs
  • 1 cup butter, melted
  • 1/3 cup brown sugar
  • 1 2/3 cup sugar
  • 1/3 cup cornstarch
  • 1 1/2 cup milk
  • 6 egg-yolks, beaten
  • Zest and juice of 5 lemons
  • 1 1/2 cups sour cream
  • 1 cup fresh-whipped sweet cream

Instructions

In a large bowl, mix together graham crackers, 1/2 cup butter and brown sugar.

In a microwave-safe container, whisk together sugar and cornstarch. Slowly whisk in milk, eggs, zest, juice and 1/2 cup butter. Microwave for 2-3 minutes, just until boiling. Whisk mixture then return to microwave and cook for 1 minutes. Fold in sour cream, spoon mixture into crust. Refrigerate until firm. Serve with dollops of whipped cream.

Peppermint Mocha Latte Cookies for the College Housewife

This time of year I love breaking out a bunch of fresh cookie boxes and handing out homemade gifts to friends and family. I always make a variety of cookies, but these peppermint mocha latte cookies are a crowd favorite time and time again. 

This is a rich chocolate cookie made with cocoa powder and espresso. After they finish baking, they are dipped into velvety melted chocolate infused with peppermint extract and sprinkled with crushed candy canes. 

Not only do these cookies taste like a peppermint mocha latte but they are a synch to make! You don’t need any stand mixers or heavy equipment just a large mixing bowl, a great spatula (and a little elbow grease!) and my GoodCook extra-large baking sheet. This time of year I’m trying to bake as much and as quick as I can. This baking sheet is 21×15 inches and fits up to 24 COOKIES at a time! It’s wonderful and SO useful in my kitchen arsenal. 

Peppermint Mocha Latte Cookies Ingredients:

all-purpose flour
cocoa powder
instant espresso powder
salt
baking soda
brown sugar
granulated sugar vanilla extract
softened butter
eggs
package of chocolate chips
melted chocolate
peppermint extract
crushed candy canes

How to make Peppermint Mocha Latte Cookies: 

  1. In a large mixing bowl combine flour, cocoa powder, espresso powder, salt and baking soda and set aside. 
  2. In another large bowl cream together sugars, vanilla extract and softened butter until creamy and fluffy. Stir in eggs until combined. 
  3. Add in flour mixture in two increments until all incorporated and fluffy. Stir in chocolate chips. 
  4. Scoop out 1-inch onto GoodCook extra-large baking sheet and bake for 8-10 minutes at 350 F. 
  5. Allow cookies to cool on baking rack and then dip one side into melted chocolate. Sprinkle with candy canes and let cool completely and allow chocolate to harden before serving.

  • 1 1/2 cups of all purpose flour
  • 1 cup cocoa powder
  • 1 tablespoon of instant espresso powder

Combine flour, cocoa powder, salt, and baking soda in a mixing bowl and set aside. Combine brown sugar, granulated sugar, vanilla extract and softened butter until well combined and creamy. Add eggs and whisk until combined. Add dry flour ingredient mixture in two increments and mix until incorporated. Add in chocolate chips and stir.

Scoop one inch balls onto GoodCook extra large baking sheet. Bake for 8-10 minutes. Let cookies cool for 5-10 minutes on baking sheet and transfer to a wire rack to finish cooling.

Melt chocolate in a microwave safe dish for 30-second increments, stirring after each increment. Once melted, stir in the peppermint extract. Dip half of cooled cookies into melted chocolate and sprinkle with crushed candy canes.

Ingredients

  • 2 sticks butter, softened
  • 1 cup White Granulated Sugar
  • 2/3 cups Packed Light Brown Sugar

  • 1/2 cup Hot Chocolate Mix

Instructions

Preheat oven to 350 degrees. In a large bowl or stand mixer, beat together butter, sugar, and eggs until combined. Add flour, hot cocoa mix, salt, baking powder, and vanilla. Mix until well combined. Roll approximately 2 tablespoons of dough into balls. Place on a parchment-lined baking sheet. Bright pink cookies, scented like strawberry. This quick and simple cake mix hack is perfect for parties!

Ingredients

  • 1 (15.25 oz) box vanilla cake mix
  • 1 (3 oz) box strawberry gelatin
  • 2 eggs
  • 6 Tbsp butter, melted
  • 2 Tbsp rainbow nonpareils

Instructions

Heat oven to 350ºF. 

In a large bowl, stir together cake mix, gelatin, eggs and butter until well mixed. 

With a Sweet Creations cookie scoop, scoop batter onto a parchment lined Sweet Creations cookie sheet. Sprinkle with sprinkles.

Peanut butter and gingerbread are our new favorite holiday combo. Dark chocolate adds an extra layer of indulgence making these cookies a festival update to classic peanut butter cups.

Ingredients

  • 1 cup sugar
  • 2 egg
  • 2/3 cup peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup molasses
  • 1 Tbsp. ground ginger
  • 2 teaspoon pumpkin pie spice
  • 1 Tbsp. vanilla
  • 4 cups flour
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups dark chocolate chips

Instructions

Preheat oven to 350 degrees. In a stand mixer, mix together sugar, egg, peanut butter, butter, and molasses until creamy. Add ginger, pumpkin pie spice, vanilla, flour, baking powder, and salt. Mix until a thick dough forms. Roll the dough onto a large piece of parchment paper. Cut into shapes with Good Cook cookie cutters. Transfer a parchment lined Good Cook baking sheet. Pumpkin-Maple Cheesecake Oreo Trifle

Treat yourself to the best of fall flavors with this easy no-bake dessert.

Ingredients

  • 2 (8 ounce) bricks cream cheese, softened
  • 1 packet instant pudding, cheesecake flavor
  • 2/3 cup pure maple syrup (or 2/3cup sugar)
  • 3 cups whipped topping
  • 1 packet instant pudding, white chocolate flavor
  • ½ cup pumpkin puree
  • 1 tablespoon pumpkin pie spice
  • 1 package double-stuffed Oreos, crushed to a fine crumb
  • ½ cup bourbon chocolate sauce or chocolate fudge

Instructions

In a stand mixer, beat together 1 block cream cheese with the cheesecake pudding mix, whipped topping, and ¼ cup maple syrup. With a Good Cook spatula, transfer this mixture to a bowl and set aside In the stand mixer, beat together the second layer of filling by whipping 1 block cream cheese, remaining maple syrup, white chocolate pudding flavor pumpkin puree, and pumpkin pie spice. In martini glass (or in large or small trifle dishes), spoon a thin layer of Oreo crumbs, a layer of cheesecake, and a layer of pumpkin filling. Spread each layer out until flat with a clean spoon. Top with oreo crumbs, and garnish with a drizzle of chocolate sauce. Serve and enjoy.

Lemon Meringue Bars with a Shortbread Crust

Ingredients

  • FOR THE CRUST
  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 cup Confectioners’ sugar
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold butter, cut into 1-inch piece
  • FOR THE FILLING
  • 1 1/2 cups granulated sugar
  • Pinch of salt
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 4 large eggs
  • FOR THE MERINGUE
  • 3 egg whites
  • 1/8 teaspoon cream tartar
  • 1/2 granulated sugar

Instructions

Preheat oven to 350 degrees. Spray a 9×9 Good Cook Air Bake pan with nonstick baking spray. In a food processor, pulse together all ingredients for the crust until mixture resembles coarse meal. Press into the bottom of the prepared baking pan. Bake for 17 minutes to set the crust. In a large bowl, beat together all filling ingredients until well combined. Pour over the hot crust and return to the oven. Bake for 10-12 minutes, or just until the mixture begins to set slightly. While the lemon filling bakes, beat egg whites and cream of tartar until soft peaks form. Add sugar, mixing until the meringue is fluffy and shiny. Spoon this mixture on top of the hot, slightly-set lemon bar mixture. Return to oven and bake for 10 minutes more, or until the meringue is slightly browned at the tips. Remove and cool completely before slicing and serving.

No-Bake Easter Nests

This chocolatey no-hassle recipe is quick, easy, and tradition-worthy. Kids of all ages will enjoy this Easter treat.

Ingredients

  • 1 cup semisweet chocolate chips
  • 1 cup butterscotch chips
  • 4 cups chow mein noodles
  • 1 cup mini candy-coated chocolate eggs

Instructions

In a microwave-safe bowl, melt chocolate chips and butterscotch chips together. Stir until smooth. Add the chow mein noodles to the bowl, slowly stirring until coated. Chocolate Covered Mint Patties

Make your own Chocolate Covered Mint Patties with this doable and very delicious recipe!

  • Prep Time: 20
  • Total Time: 20
  • Yield: 12

Ingredients

  • 1 1/2 teaspoons peppermint extract
  • 1/3 cup corn syrup
  • 5 Tbsp softened butter
  • green food coloring
  • 4-5 cups powdered sugar
  • 10 oz chocolate candy melts

Instructions

In a large mixing bowl whisk together melted butter, corn syrup, food coloring and mint extract. Add powdered sugar and mix, cup by cup (about 4-5 cups) until mixture is firm. Once mixture can no longer be mixed with a spoon, knead with your hands. Powder a work surface with a little powdered sugar and knead your mix into a soft round ball. Pinch off small amounts and roll into 1-1.5 inch balls. Lay on a wax covered cookie sheet. Press down on each ball to flatten then transfer pan to refrigerator to chill. Melt candied chocolate melts in microwave until smooth. Dip each patty in the melted chocolate, flip and quickly remove with a fork. Transfer to fridge to chill for a bit and allow the chocolate to harden, then serve!

Ingredients

  • 1 cup butter, softened
  • 1/2 cup dark brown sugar
  • 2-1/4 cups flour
  • 2 tbsp vanilla or bourbon

Ingredients

  • 1 pie crust (homemade or store bought) 3/4 cup buttermilk
  • 1 cup pumpkin puree
  • 1⁄3 cup sugar
  • 1 teaspoon cinnamon 1⁄4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 egg

Instructions

Preheat oven to 350°. Using a large glass, cut pie crust into 6 circles. Gently press into the bottom and up the sides of a 6­cup muffin tin. Use a cookie cutter to cut out decorations with remaining pie crust. Chill until ready to use. In a small bowl, whisk together buttermilk, pumpkin, sugar, cinnamon, salt, vanilla, and egg. Add a scant 1⁄4 cup of pie filling to each muffin cup. Top with pie crust decoration. Bake for 30 minutes, or until crust is golden and filling is just set. Cool for 20 minutes, then transfer to a rack to cool completely.

No Bake Chocolate Peanut Butter Pretzel Bars

No-Bake Peanut Butter Pretzel Bars. The ULTIMATE super-easy lunchbox nosh, afterschool snack, potluck dessert perfection!

In the summer, I’ll do just about anything to not have to turn on my oven. We don’t have air conditioning, as soon as the oven goes on, so does the temperature in our entire house. So that means in the summer it is “no bake” every meal dessert season! This No-Bake Chocolate Peanut Butter Pretzel Bar is just what the doctor ordered when it is hot out and you are craving something sweet, salty, and delectable. They could not be easier. Plus, they’re a perfect treat to tuck into school lunchboxes, or to serve as afterschool snacks. In fact, this recipe is so easy, the kids can make them all by themselves!

Another perk, this recipe makes a lot. A little goes a long way, they are very rich. (Rich, but very hard to say no to.) 

My favorite way to eat these is cold, straight out of the fridge. I also like to leave some bigger sized pretzel crumbs in the mix for texture. You can also add chopped peanuts, or mini chips. I have made them with dark chocolate chips and love the contrast between the sweet filling and the dark chocolate. This a great recipe to adapt.

Do you guys hear what I hear?

Yep, it’s that time of year of again and I couldn’t be more excited. 

I absolutely love getting outside this time of year. It’s not too hot, it’s not too cold, and there is always a wonderful breeze. Things just feel fresh and new and it makes me happy. I’m in the mid-west. Hopefully you’re experiencing similar weather wherever you’re located!

These little grilled sandwiches are one thing that my kids beg to make again and again. I love how easy they are. I don’t even need to supervise at this point, but my kids are older and have plenty of practice using a stove. You might need to be a little more hands on than I am.Grill1

All you’ll need is a frozen pound cake, peanut butter, Nutella, and butter. How easy is that? 

I used a Good Cook Grill to make these sandwiches and you can easily cook 4 at a time, making this a dessert that’s ready in minutes. 

I slice my pound cake very thin since I’ll be sandwiching two pieces together. You’ll just spread some softened butter on one side of each slice of cake. On the non-buttered side you’ll spread on some peanut butter and Nutella. Place another slice on top with the butter side out and grill these babies up. 

You really only need to cook them for a couple of minutes on each side. The goal is to get them lightly browned on the outside while the inside is nice and melty. 

Be sure to use salted butter for these. The little salty bite of the butter against the sweet pound cake is divine.

Peanut Butter and Nutella Grilled Sandwiches

These sweet and salty grilled sandwiches are the perfect summer treat

  • Cook Time: 5
  • Total Time: 10 minutes

Ingredients

  • 1 loaf frozen pound cake, thawed
  • 3 tablespoons butter
  • 1/2 cup peanut butter
  • 1/3 cup Nutella

Instructions

Slice the pound cake into 16 thin slices. Spread one side of each slice of cake with a thin smear of butter. Flip the slices of cake butter side down and spread half of them with a layer of peanut butter and half of them with a layer of Nutella. Sandwich them together. Heat a griddle over medium heat. Place the sandwiches on the griddle and cook for 2 minutes or until golden. Flip and cook for 2 more minutes. Serve immediately.

   4-Ingredient Robin's Egg Fudge

It’s here, you guys. 

No, I’m not talking about Spring! Nope, not talking about Easter, either. 

I’m talking about Candy Season. 

Yeah, it’s a thing. A totally delicious thing. 

One would think that Halloween would be the candy capital of the year, but in my house it’s this time of year.

We have egg hunts at the church, egg hunts at both grandmas’ houses and, of course, the Easter Bunny drops by and hides a few candy-filled eggs. So, yeah. We will be drowning in pastel colored candy any time now! And, to be perfectly honest, I can’t wait. Especially for the peanut butter eggs. Is anyone else just straight addicted to those guys? 

As much as I love to sit around and down handfuls of candy while watching Netflix, I try to be a little more responsible. And by responsible, I mean that I add handfuls of candy to other sugary things and call it dessert. Seems legit, right? Being a grown up is the best.

I went ahead and grabbed a bag of the mini Robin Eggs while I was at the grocery store this week and stuck them in the easiest ever fudge recipe.

The thing is, I’m not usually very good at fudge. It turns out soupy or it turns out grainy or it turns out like a rock. This fudge recipe, though? Nope. Can’t mess it up, even if you try! You have to give it a shot.

This easy white chocolate fudge is made from a base of powdered sugar, cream cheese, and melted white chocolate. You won’t even need a candy thermometer for this one! Don’t you love recipes that aren’t super fussy?

Once you’ve got your fudge all mixed up, you just chop up a handful of Robin Eggs and stir those right in. Spread it all out into a foil lined 8×8 baking dish, refrigerate for at least 4 hours, cut it into colorful little squares, and you have the most fun, Springiest treat ever! 

Feel free to swap in your favorite pastel colored candy here! You could even stir in some sprinkles if you really wanted to get fancy.

Peanut Butter Butterfinger Dip – creamy, fluffy, peanut butter dip with chunks of Butterfinger. Great with apples or graham crackers!

Sweet Party Treat! Peanut Butter Butterfinger Dip

 I am pretty sure I could live on snacks. Sweet or savory, it doesn’t really matter. I can not go through the day without having snacks! What is your favorite snack? I grew up with apple slices and peanut butter, and to this day it is still one of my favorites. But instead of just plain peanut butter, I decided to completely up the game.   Peanut butter, cream cheese, whipped topping, and Butterfingers take snacking to an entirely different level.  Creamy Peanut Butter Butterfinger Dip is sure to be one of your new favorites!

This dip is probably more of a dessert, but really any excuse to eat this will do. Peanut butter Butterfinger dip is delicious with slices of apples, graham crackers, animal crackers, and Nilla wafers. I may have eaten some straight off a spoon, but I will never admit it! It also works well on top of brownies, but won’t tell you know I know that. It took all of my will power to not eat it all. There is just something about peanut butter and chocolate together! Especially in a creamy and fluffy dip.

Peanut butter Butterfinger dip comes together in just 5 minutes. Just cream together peanut butter and cream cheese, and then fold in the whipped topping and crushed candy. I left my Butterfingers in larger chunks, because I wanted to be able to really tell they were in there. But you can finely crush them, if that is more your style. This dip is great to have in the fridge for after school snacks, or when unexpected guests show up.

Irish Cream Cheesecake Brownie Bars

Meet Irish Cream Cheesecake Brownie Bars! Sometimes you want a brownie. And sometimes you want a piece of cheesecake. Sometimes it just makes sense to combine the two! 

These Irish Cream Cheesecake Brownie Bars are decadent, chocolatey, and have just the slightest kick from Irish Cream. These are going to be a hit at your St. Patrick’s Day get together. These are a perfect make ahead dessert too. They get better and better in the fridge. 

You can take a knife and drag it through the batters to make swirls, but I like the way two distinct layers look. Resist the urge to cut into these right away. The flavors develop overnight in the fridge and when chilled, are much easier to cut into clean squares.
