Gluten-Free Peanut Butter Stuffed Krispy Bars

Upgrade classic krispy bars with an irresistible layer of creamy peanut butter.

Ingredients

  • 1 stick butter
  • 1 cup peanut butter
  • 1 pound gluten-free powdered sugar
  • 3-4 Tbsp milk

Instructions

In a large bowl, prepare the Peanut Butter layer by beating together the butter, peanut butter, powdered sugar, and milk, until smooth. Set aside. In a large, Good Cook pot, prepare the Krispy Bar layer by melting the butter over medium heat. Add the mini marshmallows and stir until melted. Stir in the krispy rice cereal until well coated with the marshmallows. Spread half of this mixture into a 10×13″ Good Cook bar pan. Spread the peanut butter layer on top, then add the rest of the krispy rice layer over the peanut butter layer. In a small, microwave-safe bowl, melt the chocolate chips and butter together. Stir until smooth. Spread over the top of the krispy rice bars. Press the candy into the top of the chocolate layer. Allow to cool completely before slicing and serving.

Ingredients

  • 3 eggs
  • 2/3 cup cocoa powder
  • 2/3 cup sugar + 3 tablespoons
  • 1 tablespoon pumpkin pie spice
  • ½ cup flour
  • 1/4 cup pumpkin puree
  • 4 ounces cream cheese, softened
  • 2 Tbsp mini chocolate chips
  • Preheat oven to 350 degrees.
  • Special Equipment: Good Cook 12-Count Mini Loaf Pan

Instructions

Preheat oven to 350 degrees. Spray a Good Cook 12-mini loaf pan with nonstick baking spray. In a medium bowl, whisk together 1 egg, cocoa powder, 1/3 cup sugar, and 1 teaspoon pumpkin pie spice. Spoon into the bottom of each mini loaf cup. In a second medium bowl, whisk together 1 egg, 1/3 cup sugar, the remaining pumpkin pie spice, flour, and pumpkin puree. In a smaller bowl, whisk together 1 egg white (discard the egg yolk of the third egg), softened cream cheese, and 3 tablespoons sugar. Swirl the cream cheese mixture slightly into the pumpkin mixture, then spoon on top of the brownie mixture in each cup. Sprinkle with mini chocolate chips. Bake for 10-15 minutes, just until the center of the brownies spring back when touched lightly. If using a mini muffin tin, bake time will be from 8-11 minutes. Cool slightly before removing from pan and serving.

Ingredients

  • FOR THE CRUST
  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 cup Confectioners’ sugar
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold butter, cut into 1-inch piece
  • FOR THE FILLING
  • 1 1/2 cups granulated sugar
  • Pinch of salt
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 4 large eggs
  • FOR THE MERINGUE
  • 3 egg whites
  • 1/8 teaspoon cream tartar
  • 1/2 granulated sugar

Instructions

Preheat oven to 350 degrees. Spray a 9×9 Good Cook Air Bake pan with nonstick baking spray. In a food processor, pulse together all ingredients for the crust until mixture resembles coarse meal. Press into the bottom of the prepared baking pan. Bake for 17 minutes to set the crust. In a large bowl, beat together all filling ingredients until well combined. Pour over the hot crust and return to the oven. Bake for 10-12 minutes, or just until the mixture begins to set slightly. While the lemon filling bakes, beat egg whites and cream of tartar until soft peaks form. Add sugar, mixing until the meringue is fluffy and shiny. Spoon this mixture on top of the hot, slightly-set lemon bar mixture. Return to oven and bake for 10 minutes more, or until the meringue is slightly browned at the tips. Remove and cool completely before slicing and serving.

No Bake Chocolate Peanut Butter Pretzel Bars

No-Bake Peanut Butter Pretzel Bars. The ULTIMATE super-easy lunchbox nosh, afterschool snack, potluck dessert perfection!

In the summer, I’ll do just about anything to not have to turn on my oven. We don’t have air conditioning, as soon as the oven goes on, so does the temperature in our entire house. So that means in the summer it is “no bake” every meal dessert season! This No-Bake Chocolate Peanut Butter Pretzel Bar is just what the doctor ordered when it is hot out and you are craving something sweet, salty, and delectable. They could not be easier. Plus, they’re a perfect treat to tuck into school lunchboxes, or to serve as afterschool snacks. In fact, this recipe is so easy, the kids can make them all by themselves!

Another perk, this recipe makes a lot. A little goes a long way, they are very rich. (Rich, but very hard to say no to.) 

My favorite way to eat these is cold, straight out of the fridge. I also like to leave some bigger sized pretzel crumbs in the mix for texture. You can also add chopped peanuts, or mini chips. I have made them with dark chocolate chips and love the contrast between the sweet filling and the dark chocolate. This a great recipe to adapt.
