Strawberry Swirl Cheesecake
This easy twist on classic cheesecake is swirled with strawberry jam, balancing the richness with bright berry flavor.

- 4 8-ounce packages of cream cheese
- 3 eggs
- 2 1/4 cup crushed graham crackers
- 1 tablespoon sugar
- 2/3 cup butter, melted
- 1 1/4 cups sugar
- 1/4 cup all purpose flour
- 5 teaspoons vanilla
- 1/2 cup sour cream
- 1/2 cup strawberry jam
Bring cream cheese and eggs to room temperature. Once at room temperature, preheat oven to 350°F. Finely crush graham crackers; a food processor works well for this. Add sugar and mix together in a large bowl. Add melted butter. Spray a 9 inch spring form pan with baking spray. Press crust into the bottom of the pan.
Mix together the cream cheese and 1 1/4 cups sugar until fluffy. Slowly mix in flour until thoroughly mixed and there are no lumps.In a separate small bowl, beat the 3 eggs and vanilla extract. Add to cream cheese mixture and mix well. Stir in 1/2 cup cream cheese.
Pour batter on top of the crust. Spoon the strawberry jam on top and swirl with a knife, making sure to leave a smooth texture on top. Bake for 45 minutes. Center will look slightly uncooked. Cool at room temperature for 30 minutes. Refrigerate and allow to set for at least four hours.
