This simple recipe results in stunning cupcakes that are jam-packed with berry flavor. We love the ease of a box mix cake, and we’ve started with a strawberry flavored mix and added in buttermilk and extra eggs. The cupcakes get a boost of moisture that makes them dense enough to hold frosting yet light and fluffy at the same time. All the ingredients come together in a GoodCook Touch 5 Qt Mixing Bowl, and we love how easy clean-up is.

Strawberry CupcakesAfter whipping up the batter, line a GoodCook AirPerfect Nonstick 12 Cup Muffin Pan with GoodCook Natural Cupcake Liners and fill each cup with batter. GoodCook Natural Parchment Cupcake Liners are made of high-quality, chlorine-fee, non-stick baking paper, and they’re perfect for this recipe. Scoop the batter with a GoodCook Deluxe Trigger Ice Cream Scoop to get even cupcakes every time.

Fill the cupcakes with strawberry jam once they’re completely cooled. For this step, fill an Oodle Tip Piping Bag with strawberry jam. Cut the tip-off, leaving a small to medium-sized opening. Insert the tip into center of each cupcake and fill with jam.

It’s Frosting Time!

The frosting has a berry boost from pureed strawberries. This extra step is worth it, but the frosting still comes together quickly and easily. Whip softened butter with electric beaters or in a stand-up mixer, adding vanilla and strawberry puree in at the end. Start adding in powdered sugar one cup at a time. Adjust the sweetness to your liking, adding more powdered sugar by the cup if it’s not sweet enough. For a silky smooth texture, add milk, one teaspoon at a time until desired consistency is reached.

The easiest way to frost these cupcakes is with an OodleTip Decorating Bag. Simply scoop the frosting into an OodleTip Decorating Bag and snip the tip with kitchen shears before frosting. Pipe onto each cookie cup and dispose of the bag when finished. That’s it—there’s no mess and no fuss with the OodleTip Decorating Bag!

If you just can’t get enough of fresh, ripe strawberries, top each cupcake with a whole strawberry. We’re in love with these fruity bakery treats!

Strawberry Cupcakes

Ingredients

  • 1 box strawberry cake mix
  • 1/3 cup oil
  • 4 eggs
  • 1 cup buttermilk
  • 1 Tbsp vanilla extract
  • strawberry jam

For the frosting

  • 1/2 cup strawberry puree
  • 2 cups salted butter
  • 2 Tbsp sugar
  • 2 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • food coloring, if desired

Instructions

For the frosting:

For the frosting, place butter in a medium bowl with an electric mixer and beat until creamy. Beat in vanilla, sugar, and strawberry puree. Sprinkle in powdered sugar, one-half cup at a time, beating well and scraping sides of bowl often. Add food coloring if desired.

For the cake:

Preheat oven to 350 degrees. Combine all cake ingredients. Prepare a GoodCook 12 Cup Muffin Pan with parchment cupcake liners. Pour/spoon the batter into the cupcake liners. Fill only 2/3 full to avoid baking over the sides. Bake cupcakes for 20-25 minutes, until a toothpick can be inserted into the center of one of the cupcakes and come out clean.

Fill a piping bag with strawberry and with a small-medium tip, insert into center of cupcakes once cool and fill centers with jam.

Frost cupcakes and top with fresh strawberry, if desired.
