This simple recipe results in stunning cupcakes that are jam-packed with berry flavor. We love the ease of a box mix cake, and we’ve started with a strawberry flavored mix and added in buttermilk and extra eggs. The cupcakes get a boost of moisture that makes them dense enough to hold frosting yet light and fluffy at the same time. - 1 box strawberry cake mix
- 1/3 cup oil
- 4 eggs
- 1 cup buttermilk
- 1 Tbsp vanilla extract
- strawberry jam
For the frosting
- 1/2 cup strawberry puree
- 2 cups salted butter
- 2 Tbsp sugar
- 2 1/2 cups powdered sugar
- 1 tsp vanilla extract
- food coloring, if desired
For the frosting:
For the frosting, place butter in a medium bowl with an electric mixer and beat until creamy. Beat in vanilla, sugar, and strawberry puree. Sprinkle in powdered sugar, one-half cup at a time, beating well and scraping sides of bowl often. Add food coloring if desired.
For the cake:
Preheat oven to 350 degrees. Combine all cake ingredients. Prepare a GoodCook 12 Cup Muffin Pan with parchment cupcake liners. Pour/spoon the batter into the cupcake liners. Fill only 2/3 full to avoid baking over the sides. Bake cupcakes for 20-25 minutes, until a toothpick can be inserted into the center of one of the cupcakes and come out clean.
Fill a piping bag with strawberry jam and with a small-medium tip, insert into center of cupcakes once cool and fill centers with jam.
Frost cupcakes and top with fresh strawberry, if desired.
