Apple, Strawberry & Avocado Salsa
A bright and crunchy fresh fruit salsa. Tastes great with sweet potato chips.
- zest and juice of 2 limes
- juice of 1 lemon
- 2 apples, cored and finely diced
- 8 oz strawberries, hulled and finely diced
- 1/4 cup fresh chives or scallion, finely chopped
- 1 Tbsp chopped fresh mint
- 1 avocado
- salt and pepper to taste
Place lime zest and juice and lemon juice in a large bowl. Add apples, strawberries, chives and mint. Toss until coated in lime juice. Gently stir in avocado. Salt and pepper to taste. Serve immediately and enjoy.
