Delicious, easy-to-make pancake dippers are perfect for breakfast on-the-go.
Heat oven to 350°F. Spray muffin tin with non-stick cooking spray.
In a medium bowl mix together pancake mix according to instructions. In one cup of prepared pancake mix and stir in 2 tablespoons of mini chocolate chips. Scoop 1 tablespoon of pancake batter into prepared mini muffin pan. Top with a few more mini chocolate chips and bake for 6-7 minutes or until a toothpick comes out clean.
Serve with warm maple syrup.
If you make multiple batches you can freeze the leftover muffins on a wax paper lined tray. Place the frozen muffins in a freezer bag. Reheat 4 at a time for 45-60 seconds.
