Lemon Basil Pasta
Look no further for a quick, satisfying lunch that’s full of flavor. A healthy, easy-to-make summer lunch that’s perfect for the office or when you’re on the go.
- 1 ¼ cup water
- 1 cup penne
- ½ zucchini
- 4 asparagus
- ½ medium carrot
- ½ squash
- 1 T Basil
- 2 T fresh lemon juice
- ¼ cup Italian cheese blend
- Salt and Pepper
Using the GoodCook microwave steamer, place dry uncooked pasta, and 1 ¼ cups water in the base. Put steamer plate and lid back on, cook on High in the microwave for 10 minutes.
While pasta is cooking cut zucchini, squash and carrots into rounds, and asparagus into 2 inch pieces.
Carefully remove pasta when done, add another ½ cup water into the bottom with pasta.
Place steamer plate back on and put all vegetables on top, cover with the lid.
Cook on high for 5 minutes.
When done put all vegetables on top of pasta. Add the lemon juice, chopped basil, cheese, salt and pepper to taste.
