Cut chicken into bite-sized pieces, set aside.
Remove the ends from the zucchinis and using a spiralizer, cut into zoodles. Put 2 tablespoons sesame oil into large frying pan on medium-high heat. When warmed add ginger and garlic, sauté for a 1 minute or until fragrant, do not burn. Add chicken to pan, give a quick stir and sauté for 3 minutes. Stir and continue to cook until all sides are browned and cooked through, remove from pan.
Add peppers and onions sauté to the hot pan and cook for 5 minutes or until tender. Add chicken back to pan, stir in Sriracha and green onion. In a different frying pan over medium heat, place remaining 1 tablespoon of sesame oil.
Add zoodles and cook for 4-6 minutes.
Remove from heat and season as desired. Serve with sesame chicken over the top.
