Sesame Chicken Zoodles
Throw dinner together in a hurry with this delicious and light Asian-style meal.
- 1 lb. chicken breast
- 1 red pepper
- ¼ red onion
- 3 T Sesame Oil- divided
- 1 T fresh minced ginger
- 2 garlic cloves minced
- 1 T Sriracha chili sauce
- 2 T sliced green onion
- 2 zucchini
- Salt and Pepper
Cut chicken into bite-sized pieces, set aside. Using a knife, cut around the top of the pepper and remove the stem and seeds. Then cut pepper into rounds. Slice the onion into rounds as well.
Remove the ends from the zucchinis and using a spiralizer, cut into zoodles. Put oil into large frying pan on medium high heat. When warmed add ginger and garlic, sauté for a 1 minute or until fragrant, do not burn. Add chicken to pan, give a quick stir and sauté for 3 minutes. Stir and continue to cook until all sides are browned and cooked through, remove from pan.
Add peppers and onions sauté to the hot pan and cook for 5 minutes or until tender. Add chicken back to pan, stir in Sriracha and green onion. In a different frying pan over medium heat, place remaining 1 T of sesame oil.
Add zoodles and cook for 4-6 minutes.
Remove from heat and season as desired. Serve with sesame chicken over the top.
