Perfect Piping Icing

  • 1 1/2 cup pasteurized egg whites (or 8 egg whites)
  • 1 Tbsp fresh lemon juice or clear vanilla
  • 8 cups of powdered sugar
  • food coloring (optional)


In a stand mixer fitted with a whisk attachment, beat egg whites and lemon juice until foamy. Add powdered sugar, beat on high until shiny with stiff peaks, about 5 minutes. Tint as desired with food coloring. For best results, keep in an airtight container until ready to transfer to an icing bag. Pipe, decorate and enjoy.
