Perfect Piping Icing
- Prep Time: 15 hours
- Cook Time: 15 hours
- Total Time: 30 hours
- Yield: About 4 cups, enough to ice 24 cookies
- 1 1/2 cup pasteurized egg whites (or 8 egg whites)
- 1 Tbsp fresh lemon juice or clear vanilla
- 8 cups of powdered sugar
- food coloring (optional)
In a stand mixer fitted with a whisk attachment, beat egg whites and lemon juice until foamy. Add powdered sugar, beat on high until shiny with stiff peaks, about 5 minutes. Tint as desired with food coloring. For best results, keep in an airtight container until ready to transfer to an icing bag. Pipe, decorate and enjoy.
