Rocky Road Cookies are a fudgy, chewy twist on classic rocky road ice cream. Rich and decadent chocolate cookies are studded with mini marshmallows, chocolate chips and crunchy walnuts, with a drizzle of chocolate icing on top. This recipe starts by combining butter, brown sugar and eggs in a GoodCook Touch 5 Qt Mixing Bowl and beating until light and creamy. You can also use a stand mixer for this task. Add the flour, ½ cup cocoa powder, baking powder, salt and vanilla. After combining, the dough needs to chill in the fridge for 30 minutes.

While the dough chills, make the chocolate icing for drizzling on top. In a medium GoodCook 3 Qt Mixing Bowl, whisk together melted butter, 1/4 cup cocoa powder, 1 Tbsp vanilla, powdered sugar and water. Mix until smooth.

Steps To Make Rocky Road Cookies

  1. Pre-heat oven to 350°F.

Rocky Road Cookie Recipe Substitutions

  • We love walnuts in this recipe, but you can also use almonds, peanuts, cashews or pecans.
  • Substitute mallow bits for marshmallows if gooey isn’t your style.
  • Are you gluten-free? Use an equal amount of gluten-free flour for the regular flour in this recipe.
  • For dairy-free cookies, swap out the butter for a non-dairy buttery spread and use non-dairy chocolate chips in place of regular chocolate chips.
  • For vegan cookies, follow the dairy-free tips above and also use vegan marshmallows and egg replacer or 2 tablespoons ground flaxseed mixed with 6 tablespoons water in place of the eggs.

Ingredients

  • 2/3 cup butter, softened + 4 Tbsp butter, melted
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 Tbsp vanilla extract
  • 1 cup semisweet chocolate chips
  • 2 cups powdered sugar
  • 1/4 cup warm water
  • 1/2 cup halved walnuts
  • 1/2 cup mini marshmallows

Instructions

Heat oven to 350 degrees F.
In a large bowl or stand mixer, beat butter, brown sugar and eggs until light and creamy. Add flour, 1/2 cup cocoa powder, baking powder, salt and 1 Tbsp vanilla. Mix just until combined. Fold in chocolate chips. Chill dough for 30 minutes.
