Spicy Maple Turkey with Acorn Squash
A simple, bright red marinade which bastes the turkey with subtle spice and lots of maple-garlic flavor. Upgrade your traditional turkey for this one, and it may just become a new family favorite!
- 1 (20 lb) thawed whole turkey
- 1 can chipotle peppers in adobo sauce
- 2 acorn squash, sliced into 1” pieces, seeds removed
- 2 purple onion, wedges
- 3 garlic bulbs, halved
- 4 lemons, halved
- 4 Tbsp olive oil
- 1 cup pure maple syrup
- 1 Tbsp garlic puree
- 1 Tbsp Hungarian paprika
Heat oven to 275°F.
Place turkey in a GoodCook Jumbo Roaster. Surround with squash, onions, garlic and lemons. Drizzle with 2 Tbsp olive oil.
Remove large peppers from adobo sauce. Save peppers for another use. Mix together adobo sauce, maple syrup, garlic, paprika and 2 Tbsp olive oil. Baste turkey and veggies with sauce.
Tent aluminum foil over turkey and cook 10 minutes per pound.
Increase temperature to 375°F, remove foil. Baste every 30 minutes, cooking until the internal temperature reaches 165°F (this will take 1-2 additional hours).
Remove from oven and allow to cool until you’re ready to carve.
