Roast Beef Potato Chip Sandwich
- 1 loaf of ciabatta cut into 4 portions or 4 large crusty rolls
- 2 tablespoons butter
- 1/2 teaspoon horseradish
- 1/3 cup mayonnaise
- 2 teaspoon dijon spread
- A few grinds of pepper or 1/2 teaspoon
- 1 pound roast beef or ham, thinly sliced
- 4 handfuls of kettle-style potato chips
- 1/2 red onion, thinly sliced
- 4 generous handfuls of arugula
Heat a skillet or grill to medium heat. Split bread in half and butter, and when skillet or grill is hot, place bread buttered side down in the skillet to toast.
While bread toasts, combine mayonnaise, dijon mustard, and horseradish in a small bowl. When bread is golden brown, pull from the skillet, spread with mayonnaise mix on each toasted bread and grind a little pepper on. Then layer each bottom bread with roast beef, a handful of potato chips, red onion, and arugula. Place bread top on to finish and serve.
