Rainbow Sandwich Skewers
Yields: 1 serving
Cook time: 20 minutes
Eating the same old sandwich day in and day out can get a little boring. Nothing that a pop of color and some fun skewers can’t fix. Plus these skewers are packed with vegetables and paired with a cool, and tangy tzatziki sauce.
- 2 slices whole wheat bread, quartered
- 4 cherry tomatoes
- 2 slices of ham, halved
- 1/2 carrot, peeled into ribbons
- ¼ of a yellow pepper, cut into 4 large pieces
- ⅓ of a cucumber, peeled and cut into 4 pieces
- ¼ cup purple cabbage, large dice
- 1 red leaf lettuce
- 4 skewers, cut to fit container
Lightly toast the wheat bread. Cut the ham slices in half. Using a vegetable peeler, make 4 long ribbons. To help hold the carrot in place, pierce the top of the carrot with a fork, and use as a handle. Cut the yellow pepper, cucumber, and cabbage into 4 large chunks. Using the top half of the lettuce leaf cut into 4 pieces. Assemble the skewer starting with bread, tomato, ham- each half folded in half and then halved again, carrot-fold accordion style, yellow pepper, cucumber, purple cabbage, lettuce, and another piece of bread. Repeat until all 4 skewers are used.
Yields: 1 ½ cup
Cook Time: 10 minutes
- 1 ½ cup Plain Greek Yogurt
- ½ of one lemon, juiced- about 1 ½ T
- 1 garlic clove
- ½ large english cucumber
- 1 T fresh Dill
- ½ tsp salt
- Freshly ground pepper
Peel and then shred the cucumber onto some paper towels, a cheese grater works well for this. Bring the corners toward the top, and squeeze the liquid from the cucumber. This will help your sauce to be thicker. Put all the ingredients into a food processor or blender, Blend until smooth. Store in the refrigerator in an air tight container for up to one week. This will make enough for 6 lunches, ¼ cup each.
