Rainbow Fruit Salad Cups
Colorful cups of fruit salad, spiked with liquor or vanilla syrup, for a fresh tasty twist on classic fruit salad. Perfect for picnics, parties and potlucks.

- Yield: 12
- 1 green apple, cored and diced
- 1 red apple cored and diced
- 2 pears, cored and diced
- Juice of 1 lemon
- 1/2 honeydew melon, peeled and diced
- 1/2 cantaloupe, peeled and diced
- 3 kiwi, peeled and diced
- 1 mango, peeled, pitted and diced
- 1 pint blueberries
- 1 pint raspberries
- 2/3 cup + 2 Tbsp Grand Marnier or vanilla syrup (optional)
- 1 (8 oz) container whipped cream
- Fresh mint leaves
Toss apples and pears with lemon juice. Place all fruit in a large bowl, reserve half of berries for topping. Drizzle with 2/3 cup liquor or ginger syrup. Toss gently to combine. Spoon into small plastic cups.
Whisk 2 Tbsp liquor or vanilla syrup and whipped cream. Place a dollop of whipped cream atop each fruit cup. Garnish with a few berries and a mint sprig.
