Quinoa Fried Rice

Quick and simple, this skillet dinner is one the whole family will love!


  • 2 cups quinoa
  • 1 cup frozen mixed veggies
  • 3/4 cup peeled edamame
  • 1 red bell pepper, seeded and diced
  • 3/4 cup diced ham (optional)
  • 3/4 cup green onions, diced
  • 3 Tbsp sesame or melted coconut oil
  • 3 Tbsp soy sauce
  • 2 eggs


Place all ingredients in a large skillet, like the Good Cook Wok or Good Cook 11" Stir Fry. Heat over high on stovetop, stirring constantly, cook until mixture is piping hot and eggs are scrambled and cooked. Garnish with sesame seeds or diced scallions, if desired.
