This Pop Tart Pie has everything you love about the iconic toaster pastry in a quick and easy oversized version. Who wouldn’t want to wake up to a warm strawberry pastry on a weekend morning? Your family will love this crowd-pleasing treat, and we’ve got a few shortcuts to save you precious time in the kitchen. Pre-made pie dough and a jar of store-bought jelly will get you started on this incredibly tasty breakfast treat.
We love how easily this recipe comes together. Roll both pieces of a store-bought crust to fit a Sweet Creations Textured Nonstick Medium Cookie Sheet. Carefully place one pie crust in the pan, and spread the strawberry jam over it, leaving a 1” border jam-free around the edge. The GoodCook Spatula Spreader is perfect for even spreading.
Dip the tips of your fingers into a glass of water or use a GoodCook Touch Pastry Brush and moisten the edges of the pie crust. Top with the second pie crust rectangle. Press the edges together. The water will help to seal it. Press the edges of the crust together using the prongs of a fork to seal the crust and make a design around the edges.
While the tart is baking, prepare the vanilla cream glaze. We use a GoodCook Touch 3 Qt Mixing Bowl to combine all the ingredients. It has a non-slip base for stability and an easy-pour spout. After the tart is out of the oven and cooled, spread the glaze over the Pop Tart. Top with sprinkles and wait 20 minutes for the glaze to harden. This is the hardest part!

Pop Tart Pie
- 1 package (2) pie crusts
- 1/4 cup strawberry jam (homemade or store bought)
For the Glaze
- 2 1/2 cups powdered sugar
- 3 Tbsp heavy cream
- 1 tsp vanilla extract
- pinch of salt
- Food coloring to desired color (we used a toothpick with some pink food coloring on the tip)
Directions for Pop Tart:
Preheat oven to 375 degrees. Combine both rolls of pie crust and roll out. Cut two sheets in the size of the pan. Dollop strawberry jam in the center, and spread evenly, being careful not to get too close to the edge. Place the other pan-sized cut of dough on top, and press edges down with a fork. Bake 20-25 minutes until edges of crust are lightly browned.
Directions for glaze:
Combine powdered sugar, heavy cream, vanilla extract and salt into a mixing bowl, and mix until well combined. Add coloring slowly until you reach your desired color. Gently spread glaze on top of pop tart, allowing it to sit for about 20 minutes until cool and hardened.
