We used thick-cut Texas toast for this recipe, hearty enough to stand up to layers of sauce, cheese, and a pile of toppings. For epic flavor, we coated the toast with a buttery garlic spread and gave it a quick bake to let all those delicious flavors sink in. The spread comes together easily with softened butter, fresh crushed garlic and garlic salt.
Once the bread gets toasty, it comes out of the oven for a layer of Italian herb-seasoned tomato paste followed by a top layer of mozzarella cheese. Add your favorite toppings like pepperoni, olives, and mushrooms, or just leave it plain and tuck it back in the oven for a final broil to get it nice and melty. Serve pizza sandwiches immediately or let cool and pack for lunch.

Open-Face, Smiley-Face Pizza Sandwiches
Short cut this recipe with frozen Texas Toast Garlic Bread and omit the bread, butter/oil, garlic, and garlic salt. Earn bonus points with the kiddos by packing with the leftover parmesan and crushed red pepper topping packets from the last time you ordered a pizza.
- 1/2 cup pepperoni or salami stick, thinly sliced (or use regular sized sliced pepperoni)
- 8 string mozzarella cheeses, each pulled into 3-5 long pieces
- 8 slices thick-cut sandwich bread, such as Texas Toast
- 3 T. butter (softened) or olive oil
- 1 small clove garlic, crushed
- 1/4 teaspoon garlic salt or regular salt
- 1 (8 oz.) can tomato paste
- 1/2 teaspoon Italian herb blend
- 1/4 teaspoon sea salt
Preheat oven or toaster oven to low broil, or regular broil with the oven rack on the middle setting.
Combine soft butter or oil with crushed garlic and garlic salt; brush generously onto both sides of each slice of bread. Place bread on a small, ungreased baking sheet and into the preheating oven. Cook for 4 minutes then flip to cook second side for 2 minutes.
Place Italian herb mix and salt in your palm and rub to crumble herbs and release the fragrance, then add to open can of tomato paste (or in a small bowl) and stir to combine.
Pull toast from the oven, spread with 1½ T. sauce, top with cheese, and a smiley face of mini pepperoni slices. Return bread to the oven and allow cheese to melt, just barely browning, about 2-3 minutes. Remove pizza sandwiches and cool 5 minutes before serving or packing for lunches.
