Oreo Cheesecake No-Bake Icebox Pie
The ultimate no-bake cheesecake! This simple recipe can be whipped up in minutes and makes a great addition to potlucks.
- 20 Oreo cookies, finely crushed
- 1/4 cup butter, melted
- 3/4 cup sugar, divided
- 4 (8 oz) packages CHALLENGE cream cheese, softened
- 1 teaspoon clear vanilla, optional
- 1 cup heavy cream
- 15 Oreo cookies, coarsely crushed
Line a Good Cook 9x13” baking pan with parchment paper.
Mix together crushed cookies, butter and 2 Tbsp of sugar. Press into the bottom of the prepared pan.
In a large bowl or stand mixer, beat together remaining sugar and 1 block of cream cheese. Add remaining 3 blocks of cream cheese, mixing well between, until smooth. Add vanilla and cream, whip until fluffy. Stir in half of crushed cookies. Spread mixture into pan, top with remaining crushed cookies.
Refrigerate until firm, at least 1 hour. Slice, serve and enjoy!
