In a large pot or deep sided skillet, heat olive oil over medium-high heat. Sprinkle chicken with salt and pepper, add to pot, browning until cooked through.
Add garlic to pot, cook 1 minute, or until aromatic.
Add sun-dried tomatoes, cream, parmesan and fettuccine to pot.
Cover and bring this boil, stir, then turn heat to medium-low. Continue stirring every few minutes. Cook 12-14 minutes, until pasta is al dente.
