Everyone’s favorite pie flavors are packed into this portable holiday dessert. Two bites and no mess – perfect for holiday entertaining. We started with easy and convenient refrigerated pie dough, using a scalloped Sweet Creations Nesting Cutter to slice the dough into little rounds. Our first filling, pumpkin, uses grandma’s favorite recipe with a cream cheese twist. A mix of pumpkin puree, cream cheese, brown sugar, egg, and pumpkin pie spice bakes into the most delicious little truffle pumpkin pie bites ever. For the pecan pie, we melted butter and combined it with dark corn syrup, vanilla, eggs, and crushed pecans. An utterly delicious treat! For the apple pie, we used a pre-made apple pie filling and topped it with a graham cracker streusel. That’s pie perfection!

One Pan Mini Holiday Pies
For the pies
- 5 rounds pie crust
- Nonstick baking spray
Pumpkin Pie Bites
- 3/4 cup pumpkin puree
- 4 oz cream cheese, softened
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon pumpkin pie spice
Apple Crunch Pie Bites
- 1 (21 oz) can apple pie filling
- 1/3 cup crushed graham crackers
- 1 Tbsp melted butter
- 2 Tbsp brown sugar
- 1 Tbsp flour
Sweet Pecan Pie Bites
- 2 Tbsp butter, melted
- 1/2 cup brown sugar
- 1/3 cup dark corn syrup
- 1 Tbsp vanilla
- 1 egg
- 1/2 cup toasted, coarsely chopped pecans
Cut pie crust into 3-inch rounds with a Sweet Creations Nesting Cookie Cutter.
Spray a GoodCook Oversized Mini Muffin Tin with nonstick baking spray. Press pie crust into each cup of the pan.
For the pumpkin pie bites: In a large bowl, combine all ingredients for the pumpkin pie bites. Beat mixture until smooth. Spoon into 16 of the pie-crust lined cups.
For the apple pies: Spoon apple pie filling into 16 more mini cups. In a small bowl, combine crushed graham crackers, butter, brown sugar. Sprinkle atop each mini apple pie.
For the pecan pies: In a large bowl, whisk together butter, brown sugar, corn syrup, vanilla, egg, and pecans. Spoon into remaining pie crusts.
Bake at 350 degrees F for 25-35 minutes, or until the center pecan pies begin to set in the center.
Allow to cool for 10 minutes or so before removing from muffin tin.
