Neapolitan Ice Cream Sandwiches

A summer favorite, ice cream sandwiches offer up soft, chewy cookies and cool, creamy ice cream all in one delicious bite. Better than store-bought, our Neopolitan Ice Cream Sandwiches feature bakery fresh cookies layered between yummy Neopolitan ice cream.

Ingredients

  • 1 Sweet Creations rolling pin
  • 1 Sweet Creations Nesting Cutter Set, square
  • 1 Sweet Creations full-sized sheet pan
  • 2 half-gallon containers Neapolitan ice cream
  • 1 quart-sized

Instructions

Preheat oven to 350 degrees. On a lightly floured surface, roll sugar cookie dough to ¼” thick. Cut with into 24 cookies with the medium sized Sweet Creations square cutter. Bake for 7-9 minutes, or just until cookies have set. Remove and cool completely. Remove Neapolitan ice cream from the freezer. Without removing ice cream from the container, cut the container into 1 ½” slices with a large, serrated knife. Working quickly, turn each slice flat and cut into squares with the medium sized Sweet Creations square cutter. Transfer to a small, parchment-lined baking sheet. Return to freezer immediately and allow to firm. Repeat until 12 ice-cream squares have been cut. Assemble the sandwiches by placing the frozen, cut squares of ice cream between two cooled sandwiches. Return to freezer until firm. If desired, wrap individually in plastic wrap or parchment paper. *To make this recipe into chocolate cookies, substitute ½ of the flour for cocoa powder.
