Mini Gingerbread Muffins

Tiny bites of sweet, soft gingerbread, baked in Sweet Creations mini muffin papers. So cute! So sweet! Sooo delicious!


  • ½ cup butter, softened
  • ½ cup brown sugar
  • 3/4 cup molasses
  • 1 egg
  • 3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 3 teaspoons ground ginger
  • 1 tablespoon cinnamon
  • 1 cup buttermilk
  • 3/4 cup powdered sugar
  • 3 tablespoons cream


Preheat oven to 375 degrees. In a large bowl or stand mixer, beat together butter and brown sugar until creamy. Add molasses and egg. Beat until well combined. Add flour, salt, baking soda, ginger, and cinnamon. Add buttermilk and beat just until combined. Spoon mixture evenly into 12 Sweet Creations paper muffin cups. Bake for 20-25 minutes, or until the center of the muffins spring back when touched lightly. Cool slightly. In a small bowl, whisk together powdered sugar and cream until a thin icing forms. Drizzle this icing on top of the warm gingerbread. Serve and enjoy!
