Cranberry Quickbread Loaves

Fresh cranberries are cooked into buttery, tender loaves of orange-scented quickbread. This simple recipe makes 12 perfect mini loaves. A great holiday gift to share with neighbors.


  • 3 1/2 cups flour
  • 1 cup white sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 14 tablespoons butter, melted
  • 2 cups milk
  • 2 eggs
  • 2 cup fresh or frozen cranberries
  • 1 tablespoon grated orange zest


Preheat oven to 400 degrees. In a large bowl or stand mixer, combine flour, sugar, baking powder, salt, butter, milk and egg. Beat just until smooth. Fold in cranberries and orange zest. Spoon equal amounts of batter into 12 Sweet Creations mini loaf wrappers. Bake for 22-25 minutes, or until the center of the loaves springs back when touched lightly. Remove and cool slightly before icing. To prepare the icing, whisk together all ingredients until smooth. Drizzle over warm cranberry loaves. Allow to cool completely before serving or wrapping.
